Greek Chicken Bake

There are few dishes as ‘week-day’ friendly as a good chicken bake. It’s versatile and delicious while not requiring much effort from the cook. Throw everything into a oven-proof pan/dish and allow it to cool away while you get the kids bathed or drink a glass of wine (or both if you’re some of my friends!!). I especially love that anything goes and you can really use this as way to get rid of some of the ingredients in your fridge. Potatoes are always a good idea and you can add bacon, chorizo (or any sausage) and any veg you like. I decided to keep it simple by using free-range…

Mediterranean Delicacies Tzatziki

I just love tzatziki. My husband always jokes that I would dunk everything and anything in tzatziki if I could…but Chocolate and tzatziki doesn’t seem like such a great combo, does it? Jokes aside, I really do eat it with almost anything and one of my all time favourite meals is lamb chops grilled to medium rare served with toasted pita breads and tzatziki. There is just nothing like lamb served with good tzatziki. The Mediterranean Delicacies tzatziki is thick, rich and packed full of flavour. I love that the cucumber is kept chunky and that the garlic flavour is prominent yet not over-bearing. I was lucky enough to get…

If you know me, you know I’m someone who likes things to be done easy and quickly. I don’t know if it’s my terrible laziness or the fact that I constantly feel run off my feet, but if I can get in and out of the kitchen in 30 minutes or less, I’m happy. Because I’m a stay-at-home-mom, I have the luxury of starting dinner (or it’s components at least) during the day as I have time. I understand that most of you don’t have that luxury so I still try to keep my recipes easy and the time it takes to do them to a minimum. I always think…

Chicken & Haloumi Skewers

When I first saw Donna Hay doing these skewers I drooled, literally! For those of you who don’t know, Donna Hay is one of the most fantastic cookbook authors and food stylists of our time. This Australian has written 14 cookbooks which have sold more than 3 million copies worldwide. I’ve always loved her work but after seeing her on Masterchef Australia, I fell even deeper in love with her inventiveness and warmth. Her recipes are so innovative but yet still so accessible. Donna’s version of this included preserved lemon but because I couldn’t find any and I definitely couldn’t be bothered making my own, I tweaked the recipe to…

Lamb Burger with Tzatziki

I have many food favourites. Grilled Prawns with loads of home-made chilli sauce and garlic butter, Risotto, Fresh oysters with a drizzle of lemon, tobasco and black pepper. But when I want something fast, delicious and satisfying, I turn to a burger. I think it’s got to do with my love of sandwiches. And a burger is just that, a glorified sandwich. I’ll be the first to admit that I don’t shy away from a McD’s Spicy Cajun Chicken burger but there is just nothing like the satisfaction you get from making and building your own burgers. In our household we do ‘Burger night’ regularly where my dad grills some…
