Roasted tomato & garlic linguini

As I look out our office window, I am treated with the most beautiful bright pink Bougainvillea against a bright blue sky. The sight always puts a smile on my face because I know that Spring is well and truly here. Along with all the other things I adore about Spring, I love the fact that there is an abundance of lovely fresh produce around.   Last week I saw the most beautiful Rosa tomatoes in my supermarket and decided to use them in a simple pasta to showcase their beautiful flavour. I decided to roast them along with two whole heads of garlic and made a quick sauce using…

Meatball Sub with spicy tomato relish6

The first time I ever heard about a “Meatball Sub” was when I was about 14/15. I was watching one of my all-time favourite tv programs, FRIENDS and Joey bought a Meatball sub to eat in the back of a car. He was so infatuated with this meatball sub and didn’t even want Chandler to smell it as he was “stealing taste particles”. Any sandwich that makes a man complain about people stealing taste particles is a sandwich I want…now! So over the weekend I had no idea what to serve for lunch and as I was strolling through the supermarket, saw the most delectable, fresh mini baguettes. Crusty on…

Chicken Parmigiana

Throughout Winter, most people turn to a bowl of soup, stew or curry to get warm and toasty but at times I feel like it’s just a bit too heavy and I need something lighter, but no less comforting. Enter pasta with hearty sauces. Chicken Parmigiana is originally made by crumbing the chicken breasts, frying them and then placing them in the tomato sauce to bake. I never do the crumbing part. I find that the crumbs almost always goes a little soggy because of the tomato sauce and it adds unnecessary fat to the meal. By just browning the chicken in a tablespoon or two of olive oil it…

Marinara Sauce

As you might recall from my Cheesy Meatballs post, I have an intense desire to be like a real Italian Mama one day. I want my children to adore me like Italian children adore their mothers and I want my children to know that at my house, there will always be food and laughter to comfort and nourish them. But, just like I said in my Cheesy Meatballs post, I can dream of being a little Italian Mama until I’m blue in the face, because I’ll never be little nor Italian. But what I can do, is strive to cook like one. I might have the wrong idea here, but…

Meatloaf

For as long as I can remember I’ve seen Meatloaf done on American TV. It always makes an appearance at the “family table” and they all apparently love it. I’ve always been a bit skeptical of the idea but then again, I never used to like meatballs either. But in the last two years, my love for meatballs has grown and so, I started thinking, maybe meatloaf wouldn’t be the worse thing in the world to give-a-go? I started researching it and found that many people complained that the meatloaf was dry and tasteless by the time it was done. But then, I saw the same complaints with meatballs. I…

Bacon & Chilli Pasta

I was so not in the mood to cook dinner last night. All I wanted to do was watch Oprah (yes, I watch Oprah…stop judging!) and do nothing. But I got off my lazy bum and threw together, what I thought would be quite a boring and bland pasta. Well, it wasn’t! It was actually really, flipping good. Don’t you just love that? When you think your dinner is going to be boring and it turns out to be something quite fab? There’s not much to be said about this dish, other than it took me literally 22 minutes from doing nothing, to having it on the plate. I walked…

Cheesy Meatballs

Also known as, Meatballs with Spaghetti. But no matter how you say it, this meal conjures up images of little old Italian ladies feeding their massive families and their sons just glowing in the love that is Mama’s cooking. I so hope to be one of those ladies one day. Although I’ll never be little nor Italian! I used Lamb mince for my meatballs but only because that’s what I had in the freezer. You could use any mince for this and it would be delicious. You could also make your own tomato sauce but using a few tins of tomato puree and chopped tomatoes just makes this so much…
