Raspberry Frangipane Tart

There are few desserts/pastries that are sure to impress like a well-made Frangipane tart. I am beyond in love with the subtle almond flavour the Frangipane cream filling adds. Add some tart, juicy berries and a thin, crisp crust and you have pastry perfection. I’ve made Frangipane before but used Nectarines and although this is an equally delicious way of making this tart, the raspberries add an incredible dimension of flavour that can only be achieved with slightly sour fruit. I decided to spread a thin layer of good quality raspberry preserves on the pastry before adding the filling to pump up the raspberry flavour. I served this as…

Nectarine Frangipane Tart

Is there anything more delicious than a fresh, ripe Nectarine? I just can’t get enough of them at the moment and try to eat them everyday (if my kids don’t finish them all before I get a chance to grab one). I’ve never really cooked with nectarines and wanted to do something quite special with them so I decided to make a tart with them. After much deliberation and research (gosh, I’m making it sound quite serious, aren’t I?), I decided to make a Frangipane tart.      When I was younger I had this idea that frangipane tarts are hard work and that only experienced pastry chefs could pull…

Banana Cream Pie

This is the second week that I’ve started off with a dessert recipe, but during Winter, sometimes that’s all you need. And this being my birthday week, it’s even more justified. Banana Cream Pie is something I’ve been dying to try. As I’ve mentioned before, I have quite a fascination with American food and I’ve ventured into it just slightly. We only recently got The Food Network in South Africa and I’ve been kind of hooked on some of those shows. Some, I don’t care for as much but The Barefoot Contessa (Ina Garten – I love you!) and Diners, Drive-ins and Dives have been two of my favourites. DDD…

Marshmallow Fridge Tart

If you consider yourself a food purist / food snob or someone who only eats at fine dining restaurants, look away now. Because what I’m about to share with you, might shock you. Over the last few weeks, I’ve been going through my mom’s mountains of cookbooks stored all over our house. I need to clarify first of all that my mom was a hoarder of note. Everything and I mean everything was kept. She even had a piece of paper in the side of her door where she would rub our kisses on when she dropped us at school, so that they could me kept. So it will come…

Milk Tart

Milktart is yet another one of those proudly South African favourites. And boy, it sure is a favourite in this household. However, this is not a traditional recipe for milktart, this one has a bit of a twist. Instead of using sugar to sweeten the ‘custard’, I used condensed milk. It adds a lovely creaminess as well as  really great flavour that you can only get from condensed milk. And you know something is good when a very loud Afrikaans family all go completely silent while eating it. And that’s exactly what happened when I served this as dessert last week. I made the pastry for the crust myself but…

Spinach, Ham & Olive Tart.

It seems that in summer months, our weekly menu’s always have one meal with pastry in it. I love simple tarts that take almost no time to do, and when they taste this good, there’s really no excuse NOT to try it. This is a super easy one and the end result is something like a rustic Pizza. Serves 4 1 roll, Ready Made Puff Pastry 250g (8.82 ounces) Baby Spinach 1 onion, finely diced 3 Garlic Cloves, Crushed 4tbsn Greek Yoghurt 1 egg, beaten 200g (7.05 ounces) Smoked Ham, Sliced 2 handfulls, Pitted Baby Calamata Olives Grated Parmesan Cheese (don’t bother using the powdered stuff. If you can’t get…
