Mexican Chicken & Bean Stew

I am often left standing in front of my fridge/freezer before dinner not having a clue what to cook. During these times my creativity is tested to the max and I sometimes come up with the most (surprisingly) delicious meals. The idea for this dish came up a few nights ago when I was left with a pack of skinless chicken thighs and not much else in my kitchen. I always have my pantry stocked with tinned tomatoes and tinned beans so I didn’t have to think twice about including these into my dish. Along with spices and smoked chillies it was settled : Mexican Chicken & Bean stew was…

Osso Bucco with Gremolata

In Pretoria, Winter is here in every sense of the word. In the morning I struggle to get out of bed because, even though it’s usually a beautiful day outside, there’s an iciness in the air that can only be braved with lots of coffee and a blanket wrapped around oneself. The afternoons are normally really pleasant with just a slight chill in the air before the iciness returns for it’s evening shift. But I’m not complaining…I Love Winter! The only thing I don’t like about Winter is seeing all the trees stripped of their leaves. And with Winter around, the only thing I ever really want is comforting stew. As a…

Tamatie Bredie (Lamb & Tomato Stew)

Most South Africans have a memory of Tamatie Bredie (Tomato stew in Afrikaans), but I am not one those South Africans. I absolutely hated stew as a child so whenever it was made, I ate salad or bread instead. I also didn’t like rice so I couldn’t even enjoy the rich sauce. But as I grew older I realised what I had been missing. Stew in any shape or form is just so luscious and comforting that I now, can’t believe what a picky brat I must’ve been. I’ve been reading about Tamatie Bredie for years now and never thought about making it, I really don’t know why. And yesterday…

Coq Au Vin

Coq au Vin, like Boeuf Bourguignon, has been one of those dishes that I’ve been dying to make. Just the name conjures up images of the beautiful French country side, a mother lovingly chopping, sauteing and cooking a big pot of stew for her family. The whole family coming together and dunking crusty pieces of Baguette into all the rich, wine-flavoured juices. Of course, the picture back at home is a little bit different. Not only don’t I stay in the beautiful French country side but I also don’t have time to marinade the chicken for at least 24 hours, then brown it before adding back the marinade, frying the…

Short Rib Bourguignon

I think most of us know what Boeuf Bourguignon is by now…especially if you’ve watched Julie&Julia. Julie Powell could not stop raving about her childhood memories of her mother cooking Boeuf Bourguignon when guests came around, but it wasn’t any Boeuf Bourguignon, it was Julia’s Boeuf Bourguignon. Every time she said “Boeuf Bourguignon” my stomach grumbled and I was anxiously waiting for winter to come so I could finally try it out. The only problem is that I really don’t like Beef..sorry I meant Boeuf. That’s why it’s taken me so long to try it. I’ve been trying to research all different cuts of meat to see which will have…

Irish Lamb Stew

So with all these wonderful cold days around, nothing goes down better than a warm and comforting stew.  Any kind of stew would do, but I just love Lamb so it’s usually the meat of choice in my stews. I decided to do something different and decided to add some Guiness to the stew. It goes so well with the meat but be aware that it’s VERY bitter and if you add too much it might over power the rest of the stew. One can is enough for 2kg (4.41 pounds) Lamb, so if you are only cooking for 2-4 people, only use half a can. The end result is…
