I’m still working on getting my mojo back 100% but I find it hard to concentrate on cooking and recipe development when I have SO much other stuff on my plate. budget bacon& mushroom pasta

Now I know this doesn’t sound budget friendly AT ALL. Bacon is ridiculously expensive and mushrooms aren’t exactly the cheapest vegetable out there. But for 4, this is actually a really reasonable dish. And it helps that it tastes so good. This is the one dish that will debunk all the myths that budget cooking has to be boring and bland. The sauce has plenty of bacon and veg and it’s absolutely silky and creamy (without adding any cream!). Usually I would add 250ml (8.45 fluid ounces) cream and loads of cheese to this which obviously ups the calorie content as well as the price so this is a win-win…

Port & Cherry glazed Lamb Shanks

Soft, tender and juicy Lamb…sweet and sticky Port & Cherry glaze….crisp, golden and salty potatoes… I’m sure these words could be transformed into a love song. Well one that I would listen to anyway. Spinach, Ham & Olive Tart.

It seems that in summer months, our weekly menu’s always have one meal with pastry in it. I love simple tarts that take almost no time to do, and when they taste this good, there’s really no excuse NOT to try it. This is a super easy one and the end result is something like a rustic Pizza.
