Baked fish with Lemon Butter

You know you’ve got crazy family when your aunt arrives at your house from Cape Town with a giant Kingklip, wrapped in cling wrap and foil. Yes, it was frozen and YES, she did fly with it in her suitcase from Cape Town. I was very grateful that she brought me such a nice gift but I was also shocked, and relieved that it didn’t start defrosting in between her clothes..yuck! Let me just start by saying that I KNOW Kingklip is considered Orange status on the SASSI list. I don’t buy it myself, ever, and I never order it in restaurants but this was a gift from a family…

Smoked Snoek Quiche

So last week Monday, I thanked all of you for voting me into the top 2 of both the New Blog and Food & Wine blog categories! And today, I have to jump up and down, wave my arms, scream as loud as I can!! THANK YOU THANK THANK YOU THANK YOU THANK YOU!!! Not only did I win Best Food & Wine Blog, but I also won Best New Blog! And I could not have done it without the support of my amazing readers. I think this is even more special to me because last year this time, I had no idea what to do with my life. I…

Creamy Salmon & Courgette Linguini

This sounds rich, expensive and fattening right? Wrong! This is probably the only creamy pasta dish I’ve ever made that was neither expensive nor fattening. As Summer is fast approaching, more and more people are trying to cut the fat and extra calories out to get ready for bikini season. I am not one of those (the day you see me in a bikini is the day that I grow a 3rd leg!), but I still want to be healthy. And this sure as hell is. We all know we are meant to be eating more fish because of all the great Omega 3 & 6′s it has etc. etc,…

Chilli Risotto with Crispy Calamari

So my obsession with Risotto has returned! And boy is it back with a vengeance. Last night I just could not wait to eat it and almost finished an entire plate before I could even take a photo. But thankfully I had a slight bit of a will-power boost and I could take a few. Risotto is really the perfect thing to cook in Spring. It’s comforting enough to fight the slight chill left in the air but it’s not heavy like a stew or a curry. And it helps that it works with just about any other ingredient. I’ll be exploring some new combinations over the next few weeks…

Linguini with Prawns & Asparagus

I don’t really like Seafood Pasta’s. Mainly because I don’t like Tomato based sauces. But last night I knew I had to make Pasta with the prawns I had as we had rice the night before and we are having rice again tonight with the Bobotie I’m making. I spotted the Asparagus in the fridge and thought I’d pop those in too. This took literally 15 minutes. Ok, it took me 30 minutes to clean the prawns because I HATE the ‘Pink Prawns’ you get from supermarkets and Fishmongers. They never taste of anything and go completely rubbery after just 5 seconds in the pan. The amount of prawns I…

This is a really delicious and easy way to use Seafood. I think many people are intimidated by cooking Seafood but I find that there are a few rules that I always follow and it always comes out GREAT. 1. Never over cook the prawns, usually 5 minutes is enough. 2. Either cook Calamari VERY quickly or VERY long. In between = elastic band texture. 3. You can never go wrong with Lemon & Garlic with fish/Seafood. And with that being said, here is the recipe for my DELICIOUS Seafood Potjie. Serves 4-6 500g (17.64 ounces) Prawns, cleaned , shell removed 500g (17.64 ounces) Calamari Steaks, cut into chunks 250g…
