It’s the 1st of August. How is it the 1st of August already? I say it every year and every year I feel like it’s going faster and faster. I sometimes feel overwhelmed at how quickly the years seem to be flying past me. When I was in school I was SO excited when the year’s would fly past because it would mean our December holidays were upon us, but now, I don’t know how I’m going to get everything done I still need to get done this year. But then, this is how I always feel and what doesn’t get done this year, always seems to get done the…

Pork tenderloin (fillet) with creamy mushrooms

A few nights ago, I had two dinner options, a vegetarian tart or this Pork tenderloin (or Pork Fillet) with creamy mushrooms. I asked my Twitter friends to help me make the decision and it was literally 50/50. Then I spoke to my husband and he promised to break the heels off my favourite pair of shoes if I don’t make the pork. He didn’t quite understand how there was any hesitation in this matter to begin with. I actually had a serious pastry craving that night but for once I allowed my love for him to overrule my intense cravings and I started searing the pork and making the…

Linguini with Garlic & Mushrooms

Sometimes, all I need is a bowl of comforting pasta. I don’t even care what sauce/flavourings I have on it. I just want perfectly cooked pasta. Even something as simple as garlic-butter would be perfect. But alas, my family expect more of me than just garlic-butter spaghetti. So I have to compromise and give them something slightly more substantial but I still need it to be easy-peasy and no-fuss. My family have come to expect a few Vegetarian meals from me a week. I don’t always do Meatless Monday but I do Meatless twice a week generally so I feel I make up for it. I have said it many…

Stuffed Potato small (1 of 1)

So as you probably know by now, my family and I are on holiday at the moment as South Africa is celebrating our wonderful Summer (although right now it’s more like Cape Town in Winter… rainy, windy and misty). We are incredibly fortunate to be in one of the most beautiful areas of the country close to the Garden Route. I know I promised posts about all the wonderful things we’ll be doing but honestly, I just don’t get time to spend in front of my laptop. If we’re not busy playing on the beach or exploring on the rocks, we’re eating ice cream or cooking something incredible! This holiday…

This will be the last ‘budget meals’ post for a few weeks. Even though I’ve now gotten addicted to checking the prices of everything so I’ll pretty much keep cooking this way. I really think that most people can save quite a substantial amount every month if they just actually start looking at what they’re buying. And where they’re buying it. So many people buy from the same supermarket all the time without thinking twice about the possibilities at other shops. I won’t be naming any names, but there is a certain Supermarket brand that prides themselves in being much cheaper than others. 2 years ago I wouldn’t set foot…

budget bacon& mushroom pasta

Now I know this doesn’t sound budget friendly AT ALL. Bacon is ridiculously expensive and mushrooms aren’t exactly the cheapest vegetable out there. But for 4, this is actually a really reasonable dish. And it helps that it tastes so good. This is the one dish that will debunk all the myths that budget cooking has to be boring and bland. The sauce has plenty of bacon and veg and it’s absolutely silky and creamy (without adding any cream!). Usually I would add 250ml (8.45 fluid ounces) cream and loads of cheese to this which obviously ups the calorie content as well as the price so this is a win-win…

creamy mushroom soup

With this intensely icy weather our country is experiencing at present, the only food that should be served are the ones that warm your tummy, soul and heart. And of course, yet again, soup has come to the rescue. As I’m typing this, my fingers are blue, but this soup recipe is one that you HAVE to have in your arsenal so I shall continue! I actually can’t believe I’ve gone all winter without making this soup. I’m not really crazy about mushrooms, especially not on pizza or in quiche, but there’s something about a bowl of creamy mushroom soup paired with a big chunk of crispy bread that just…

Farfalle with creamy Smoked Chicken & Mushroom sauce

I am really not a fan of smoked chicken. Why, I don’t know. I’ve recently learned to love bacon (I used to really hate it…why, I don’t know!) and I have always had an obsession with smoked salmon. So I really can’t tell you why I don’t like it. So I was pretty put-off when my dad came home with some smoked chicken fillets one night. What the hell was I meant to do with them? On that same night, my husband was begging me to make him creamy pasta. You see, my husband is one of those lucky sons of …. who can eat WHATEVER they want, and not…

Submission mushroom lasagna (1 of 1)

This is another great option for Meatless Mondays. And what’s even better is my family didn’t notice there was no meat in it. I think because the mushrooms are so meaty and the flavour was so amazing, they didn’t even miss the meat. It takes a bit of effort to get all the sauces ready and the assemble but no more than a regular Lasagna…it’s actually easier than Bolognese Lasagna. Definitely worth it!! 2kg (4.41 pounds) Assorted Mushrooms, chopped roughly (I used a mix of Button, Portabello and Brown mushrooms) 1 Large onion, finely diced 3 Garlic cloves, Crushed 1 tin Chopped Tomatoes 3tbsn Tomato Paste 250ml (8.45 fluid ounces)…

Creamy chicken liver pasta

I LOVE Chicken Livers, they are quite a regular in our household but they are usually done in the truly South-African way, in a Peri-Peri gravy and served with Fresh Breadrolls and lots of butter. However, this week I though I’d do something different with them and decided to make a Pasta sauce out of them. I just kind of tossed a whole lot of stuff together and the outcome was one of the nicest pasta sauces I’ve ever tasted. Serves 4-6 750g (26.46 ounces) Chicken Livers, Cleaned and Rinsed. 1 Large onion, finely chopped 4 Cloves Garlic, crushed 250g (8.82 ounces) Portabello mushrooms, chopped 250ml (8.45 fluid ounces) Cream…
