Slow-Cooked Beef brisket chili

Even though it’s still quite cold in the mornings and evenings, signs of Spring are popping up everywhere. Our “Yesterday, Today & Tomorrow” is sporting a few blooms, the leaves on the tree outside our bedroom window is starting to return and the air has that fresh Spring scent to it. Yet, I still yearn for foods cooked slowly until it is meltingly tender, and that is exactly what this slow-cooked beef brisket chili delivers. When I asked my butcher which meat I should use for a deep and rich chili he immediately suggested brisket and gave me a huge (read : Gigantic) brisket on the bone. He did offer…

Spicy chicken & Feta quesidillas with guacamole

Quesidillas are my go-to meal when I need something quick, tasty and filling. I love it’s versatility and the fact that you an use absolutely anything as a filling. Left-overs are given a new life when teamed with gooey cheese and toasted between two tortillas/wraps. This is not so much a recipe as it is a list of suggestions for fillings as I don’t exactly need to teach you how to make a quesidilla. It really is just a different form of a toasted cheese sandwich. I always like to pair a protein (shredded chicken/pork, slow-cooked beef/lamb, roughly chopped prawns or beans) with vegetables (literally anything goes here, from spinach,…

Spicy Steak Tortillas

The weather has been thoroughly miserable in Gauteng this week so far and I am the type of person who’s emotions are directly linked to the weather. When it’s sunny outside (even if it’s icy cold) I feel cheerful and happy but when the skies are dark grey and gloomy, my mood reflects that. That’s the one reason I love living in Pretoria so much. We very rarely have cloudy miserable days during winter which is just the way I like it. Of course, I can’t control the weather but I can control the food we eat so last night I decided to take a summer-y approach to a few…

Chilli Con Carne Soup

I am a really big fan of Chilli Con Carne. I love that it can be simply eaten in a bowl with a good grating of cheese or it can be transformed into something more elaborate served with guacamole, salsa and sour cream. That’s why I thought the idea of a spicy Chilli Con Carne soup rich with aromatic flavours would be a really good one. I’ve been adding cocoa powder to my Chilli’s for a few year’s now after first seeing a recipe for Mexican Mole (a rich sauce made with chocolate served with meat) and the depth of flavour it adds is just incredible. The first time I…

Jalapeño poppers

When you enter the term Jalapeño poppers into Google, you get almost 200 000 results! That is quite a lot of people writing about / making stuffed chillies if you ask me. But who could blame them? I come from a family of Spicy food lovers. And I really mean LOVERS! My older brother has been known to drink Tabasco sauce straight from the bottle. My younger brother is famous for emptying half a bottle of VERY hot chilli sauce onto a single slice of bread, topping it with cheese and eating it within 20 seconds. And they’re not the only ones. My aunts, uncles and cousins are all like…

Healthier Chicken enchiladas

I have come to the conclusion that the reason why my mojo has been slightly wonky over the last week, is because I am now trying to cook healthier. I know, I know…healthy food CAN be delicious. But it’s so much easier to add a pot of cream and a handful of cheese to make something look and taste more appetizing. And then I started thinking about the masses of you out there who are probably also dieting or trying to lose a couple of kg’s and I thought if I’m struggling to come up with inventive and tasty but yet healthy dishes, surely you must be struggling too? So…

Cheesy nachos with steak

It’s that time of the month again, the time where I need to get my Mexican fix. As you’ll remember from my Mexican Feast post, I have as much of an obsession with Mexican food as I do with Indian food. It must be because both cuisines are based on fabulous spices and fresh flavours. I’ve never actually asked anyone, but I’m sure there aren’t many people that don’t like Nachos. There must be something about oozy, cheesy covered chips served with creamy guacamole and a sprinkling of fiery chillies that make people swoon.  Well it definitely makes me swoon. You could make this with chicken, fish, ground beef or…

A Mexican Feast.

Once, a month, the Mexican bug bites and I just can’t say no. I JUST LOVE MEXICAN FOOD. I think somewhere in my previous life I was a mixture between a Mexican/Spanish Senorita and a Middle-Eastern Princess. I think my love for these cultures started when I was 7 and I saw Spanish dancers in our local mall doing their thing. I turned to my mom and announced that I would also do that…I would be a Spanish dancer. After 7 years of practicing the castanets and the footwork and going through  bottles of La Pebras, I decided to give it a break and focus on High School. I went…
