Chicken Escalopes with olive, caper & tomato dressing

Chicken features on our menu at least twice a week and as I’ve said before, after the 100th time of trying to cook it differently, it becomes hard to get creative! Especially during the summer months when being in a hot kitchen is about as appealing as a full body wax (well for me anyway). Knowing I had to develop a recipe using Mediterranean Delicacies’ Calamata Style Olives, I wanted to keep whatever I was going to make fresh, light and perfect for Summer eating. I wanted the olives to have a starring roll and thought the chicken would be the perfect, simple backdrop. This dressing is quite amazing. It…

Mediterranean Delicacies - Calamata Style Olives

I have always loved olives. The salty, almost bitter-ness is something that I’ve never been able to resist. And thankfully for me, my husband and kids share that same love, with me. While shooting these olives, I would see little fingers creeping ever-closer to the bowl trying to snatch one. Luckily, my husband, Chris, uttered a “hey!!’ every now and then and I got to finish the shoot before they were all gobbled up! But once I packed the camera away, I’ve never seen olives dissapear so fast. Abigail & Aidan both grabbed handfulls of the olives and munched them as quickly as they could manage. A few yuuummmyyy’s and…

Crispy Phyllo tarts with tomatoes, mozzarella & anchovies

These may seem finicky and like they take a lot of trouble but I can assure you that could not be further from the truth. These gorgeous and delicious tartlettes are so easy to make, I would trust my 19-year old brother to do it (please note that my brother can barely make himself toast and he’s a master at making 2-minute noodles! What is important to remember when working with phyllo is that whatever filling you add needs to be relatively dry or else the pastry will go soggy and that kind of defeats the purpose as you want the pastry to stay beautiful and crisp. These tarts are…

Anchovy Fillets

If you had told me a few years ago that I would madly in love with a strong-smelling, super salty little fish called an Anchovy, I would’ve laughed in your face and told you that you must be smoking some strong stuff. I absolutely hated Anchovies when I was younger and couldn’t understand how people could eat them on pizzas, never mind anything else. Fast forward a few years and I would have them with everything if I could. Which is why I was so happy to see that they are part of the vast amount of products made by Mediterranean Delicacies (not surprising as their product range is impressively…

As I write this post, I can hear the waves crashing outside and the house is quiet as all the members of my family are still deeply in slumber. Everyone is utterly exhausted from the day spent on the beach yesterday. This is what Summer is all about for me. And when Summer is around, I want to eat fresh and tasty foods that don’t take hours to prepare. The more time spent on the beach or outside with my kids, the better. These crumbed lamb chops are a great example of that type of food, absolutely delicious and even though they take more time to do than say, a…

As an admitted Cheese addict, I hardly ever say no to good cheese. When I got a tub of the MD Parmesan Style cheese I was very excited to use it in one of my dishes. The very first thing I did was taste it. I have tasted a lot of bad and bland “Parmesan” before and was worried that this would be the same. I was so happy to find that the taste was wonderfully rich and nutty like a good parmesan should be and the texture was spot on. Like Parmesan, MD’s Parmesan Style Cheese is incredibly versatile and can be used in a variety of dishes. Tomorrow…

Baklava with Pistachios & Fynbos Honey

I have wanted to make Baklava for years now but I always thought it was one of those desserts that was just too difficult to make yourself (or one of those desserts that I’m just too lazy to make myself). But when I received some of Mediterranean Delicacies’ (MD) phyllo pastry, I thought it necessary to give this delicious Greek dessert a try. I was pleasantly surprised at how easy it was. The MD phyllo pastry is light and delicate and working with it was incredibly easy. I loved how it wouldn’t dry out immediately (like some other phyllos) if I didn’t cover it with a damp cloth and that…

Basil Pesto – Mediterranean Delicacies Review

I use Basil Pesto (or any pesto for that matter) quite often to add some oomph to food. There’s something magical that happens when food gets cooked off for hours. You get a depth and flavour that just can’t easily be achieved in minutes, but then again, sometimes I just can’t wait hours. I need something satisfying and delicious right then and there. That’s when things like pesto come in handy. It’s got serious punch thanks to the garlic, basil and parmesan. But one thing I find is that shop-bought pestos are often bland and boring because they don’t use good quality products. They skimp on the pine nuts (as…

A while ago I was approached to be part of a fabulous campaign for one of my favourite brands, Mediterranean Delicacies. It took almost no time for me to say Yes Yes YES!! I’ve always loved their products as my mom was an absolute Mediterranean nut (even though she had never actually been there). Mediterranean Delicacies (MD)  offers an enormous range of products at really reasonable prices so you get to feel like you’re lying on an island in the Med, eating delicious Meze all year long. Over the next few months you can expect my blog to take on a very Mediterranean feel as I’ll be incorporating these delicious products…
