The Ultimate BLT-Sandwich

  It’s confession time. Along with all my other food obsessions, I can now add sandwiches, in every way, shape and form to that list. I’m not talking about a cheese sandwich on ‘plastic’ bread or a regular peanut butter & syrup sandwich, I’m talking about good quality breads topped with simple but great ingredients cooked/prepared with love and attention. It’s almost impossible to go wrong when you follow those guidelines. Another confession, I never liked BLT sandwiches. Before I get bludgeoned for using the wrong terminology, I know a ‘Goujon’ is by definition, a strip of fish or chicken which has been covered in breadcrumbs and deep fried. And yes, I know these weren’t covered in breadcrumbs and they are neither chicken nor fish, but I couldn’t think of a better word for them than Goujons. Plus, you could do this with chicken or fish and it would be equally delicious. But quite frankly, it really doesn’t matter what you call these. Chicken burger

I have had this incredible craving for good, home-made chicken burgers for quite a while now. Why, I don’t know as I’ve never had a home-made chicken burger before. At one of my favourite fast food places (don’t judge me) they sell spicy crispy chicken burgers and I don’t care what you think of me after saying this, but I could eat those all day, everyday.
