Indian-Spiced Roast Chicken

You know that feeling? That feeling of standing infront of an ingredient that you work with week in and week out. An ingredient that is very versatile but for some or other reason you have no ideas what to do with? That’s how I felt last week when I had two, beautiful and plump, free-range chickens in front of me but had no idea what to do with them. Of course I could go the tried and tested route and flavour it with lemon juice and lots of herbs but I wanted something different. Yet, I still wanted the familiarity associated with roast chicken and all the comfort it brings…

Chicken Curry Soup

Today, it is Freezing in Pretoria. Absolutely toe-numbing, teeth chattering freezing. And the only thing I want to do is jump back under the covers with a bowl of this soup…even though it’s only 07:40am. When I told some friends that I was making Chicken Curry soup, the response was quite amusing. Some said it sounds good, some said it sounds strange and some just nodded and smiled. Trust me on this one, this is incredible. It really is just a basic chicken curry recipe that I added extra chicken stock and cream to. It’s that simple. And I decided to make Naan bread with it which is just as…

When I think of the warm aromas that spices bring to my kitchen, I feel happy. Very, very happy. There is just nothing like it. I actually cannot imagine my life without the smell of spices wafting through my kitchen. Whether it is cinnamon with it’s intense comforting properties or smoked paprika with it’s sweet and smoky flavour, spices really make my world go round. You will often find my recipes include a teaspoon of cumin or a tablespoon of coriander and although it would be fine for you to leave the spices out of those recipes, it just won’t be the same. I am often asked what I add…

I’ve said it many times before and I’ll say it again, I love India. I’ve never actually been there but my mind has been taken away on a Turmeric flavoured cloud many times in my life. I love the vibrant colours, the intense aroma’s and the beautiful Sari’s. I would easily walk around in a blinged-out Sari with jewels dripping off of me everyday. I wouldn’t say Indian cuisine is my absolute favourite but it’s definitely in my top 3. There is just nothing like walking into a kitchen where a pot of curry is on the stove. The smell is intoxicating and I am almost always reduced to a…

Kedgeree

Kedgeree is said to have been brought to the United Kingdom by British Colonials who really enjoyed it in India. I certainly don’t blame them. Easy, flavourful and with a kick of spice…who wouldn’t love this? Traditionally Kedgeree is made with Smoked Haddock, hard boiled eggs and Basmati rice but I decided to mix it up a bit. I’m not a fan of hard boiled eggs so that was the first thing to go, I decided to top my Kedgeree with a beautifully fried, sunny-side-up egg. And, although I love Basmati rice, we always have Jasmine rice in our house so that was the second substitution. And although I don’t…

Creamy Chicken & Potato Curry

It seems like winter is finally on his way out of Gauteng. Even though I am incredibly excited to start making salads and REALLY excited to have sweet watermelon in the house, I got a bit panicky. You see, I don’t make stews and curries in summer. Well very, very rarely anyway.  I just can’t stand over a hot stove when it’s so hot outside that I could actually cook the curry on the pavement. So last night, I just knew I had to make some curry to bid winter a hearty farewell. I will miss him again in December when it’s too hot to breathe, but for now, I…

Spicy Cream Prawns

If you’re a regular reader on my blog you’ll know that I love prawns. I could eat prawns every day and not get sick of it. My favourite way of eating prawns involves Garlic and lemon butter, home-made chilli sauce and juices running down your arms. And yes, I do suck on the shells and the heads…it’s delicious and I don’t care if you think it’s disgusting. There is, in my opinion, no other way to eat prawns. Most of the flavour is in the shell after all. But I also love it in a sauce over pasta or rice. And then of course, I absolutely love Prawn Curry. The…

budget lamb curry

Once again, I’m aware that lamb is not the cheapest cut of meat therefore a lot of people don’t buy it. But it sure is nice when you find some lamb on special and you can make something seriously delicious but still budget-friendly with it. I find curries and stews to be the best money-saver dishes out there as the meat is usually the cheapest of all the cuts. You can also use relatively little meat and just bulk the dish up with vegetables, which adds nutrition and flavour. That’s what I’ve done with this curry. You could use less meat if you please but with this amount it’s quite…
