Aubergine Involtini with Herbed Ricotta

After some weekends (like the one that just passed), I need to stay away from food. I ate too much and did too little and that leaves me feeling like a Heffalump! But saying that, it’s very hard to stay away from food completely, because, well, I get hungry. But I can stick to healthy, fresh food right? Let’s hope so! For breafkast I am having a frozen mango, grape and Greek yoghurt smoothie, for lunch I’ll probably have a salad of sorts but when dinner comes around, I always feel like I need something a bit more substantial which means meat and starch right? Wrong! With this Aubergine Involtini…

Greek Style Lamb Shanks

Before mentioning ANYTHING about this recipe, I have to thank all of you for the incredible support you’ve shown me over the last week. Shooting for Pasella (South-African variety TV show) has been one of the most exciting and fun things I’ve done in my life and even though it took me a while to get used to the camera and crew, it really showed me that this is something I’d love to do. And thank you so much for all the kind comments and saying I’m a “natural” on TV. That is probably one of the best compliments I’ve ever received. Now back to this recipe. When the producers…

Marinara Sauce

As you might recall from my Cheesy Meatballs post, I have an intense desire to be like a real Italian Mama one day. I want my children to adore me like Italian children adore their mothers and I want my children to know that at my house, there will always be food and laughter to comfort and nourish them. But, just like I said in my Cheesy Meatballs post, I can dream of being a little Italian Mama until I’m blue in the face, because I’ll never be little nor Italian. But what I can do, is strive to cook like one. I might have the wrong idea here, but…

herb chicken & potato bake 003

Whilst thinking of ways to best showcase herbs, I knew I had to do something with Chicken. I love chicken because it’s such a great ‘canvas’ to carry other flavours. And one of my favourite ways of cooking it, is just like this. Loads of lemon juice, mustard and herbs. The chicken just comes alive after being marinated in this mixture and after roasting, the salty skin is just to die for. This marinade can also be done in a two different ways. You could either just blitz everything in the food processor until it’s a thick-ish paste to spread on the chicken or you could chop all the herbs…

Have you ever seen beautiful, fresh produce in your supermarket and bought it just to come home and realise you have no idea to use it? Bought a new cut of meat to try and you find it too hard to think of something to do with it? This is the dilemma many people are faced with when they try to be adventurous with their grocery shopping. I used to be one of these people. Therefore, I’ve decided to introduce Themed weeks to my blog. I will be choosing different themes every second week (from different vegetables to spices and meats) and I will discuss the uses, storage options and…
