I am not ashamed to say that I am a Guacamole freak. I adore it and could have it everyday. The only thing I don’t like about guacamole is that traditionally, chopped tomato is added. I don’t know why this is but it gives me the heebie-jeebies and I can’t handle the texture.   However, when it’s left plain with a little bit of chilli, lemon, salt & pepper, I could gobble it up by the bowl full (and often do). Recently I had avocados in the house and wanted to create a side salad for dinner and without lettuce or cucumber, I decided to make this guacamole salad. Even…

Spicy chicken & Feta quesidillas with guacamole

Quesidillas are my go-to meal when I need something quick, tasty and filling. I love it’s versatility and the fact that you an use absolutely anything as a filling. Left-overs are given a new life when teamed with gooey cheese and toasted between two tortillas/wraps. This is not so much a recipe as it is a list of suggestions for fillings as I don’t exactly need to teach you how to make a quesidilla. It really is just a different form of a toasted cheese sandwich. I always like to pair a protein (shredded chicken/pork, slow-cooked beef/lamb, roughly chopped prawns or beans) with vegetables (literally anything goes here, from spinach,…

Spicy Steak Tortillas

The weather has been thoroughly miserable in Gauteng this week so far and I am the type of person who’s emotions are directly linked to the weather. When it’s sunny outside (even if it’s icy cold) I feel cheerful and happy but when the skies are dark grey and gloomy, my mood reflects that. That’s the one reason I love living in Pretoria so much. We very rarely have cloudy miserable days during winter which is just the way I like it. Of course, I can’t control the weather but I can control the food we eat so last night I decided to take a summer-y approach to a few…

Mexican Burger

My love for a good burger is unlike the love I have for other food. I don’t know why this is so but I constantly revert to this delicious classic when I am out of ideas. Who doesn’t like a good, juicy burger? I have to say though, that you haven’t had a good burger until you’ve made the patties yourself. It takes minimal effort but the result is so pleasing and satisfying that you won’t want to go back to buying your patties ready-made. Not only are the possibilities endless when it comes to making your own patties but you also know what went into them, so you know…

Vegetarian Chilli

Yet again, I post another fabulous comfort food recipe. But this time it’s got a bit of a twist. Usually Chili, as the American’s call it, consists of Beef Mince, Garlic, Onions, Cumin, tomatoes and beans, hence the name Chili Con Carne. Although this is quite a favorite in our house, I decided to go vegetarian with it. It was quite a task for me to figure out How I was going to bulk up this dish without meat. But it came very naturally and I substituted the meat with mostly Courgettes and Mushrooms. I was very nervous about my family eating this as they are very wary when I…

A Mexican Feast.

Once, a month, the Mexican bug bites and I just can’t say no. I JUST LOVE MEXICAN FOOD. I think somewhere in my previous life I was a mixture between a Mexican/Spanish Senorita and a Middle-Eastern Princess. I think my love for these cultures started when I was 7 and I saw Spanish dancers in our local mall doing their thing. I turned to my mom and announced that I would also do that…I would be a Spanish dancer. After 7 years of practicing the castanets and the footwork and going through  bottles of La Pebras, I decided to give it a break and focus on High School. I went…
