Plum frangipane tart

Everyone needs an easy, impressive and drop-dead-delicious pastry recipe up their sleeve. Mine is the incredibly versatile frangipane tart which gets a different flavour added every time I make it. I’ve made it with nectarines and with raspberries and I fall in love with it more and more every time I make it. I made this stunning tart for the NoMU Recipe Mailer for June using their stunning products. This tart really is the epitome of a chic dessert or tea-time treat and is much simpler than you might think. Raspberry Frangipane Tart

There are few desserts/pastries that are sure to impress like a well-made Frangipane tart. I am beyond in love with the subtle almond flavour the Frangipane cream filling adds. Add some tart, juicy berries and a thin, crisp crust and you have pastry perfection. I’ve made Frangipane before but used Nectarines and although this is an equally delicious way of making this tart, the raspberries add an incredible dimension of flavour that can only be achieved with slightly sour fruit. I decided to spread a thin layer of good quality raspberry preserves on the pastry before adding the filling to pump up the raspberry flavour. I served this as…

During summer, we all look for delicious desserts which can offer a source of nutrients while still tasting good, and so, when Special K asked me to come with a fabulous recipe I thought this one would be just perfect. An added bonus is that tart requires no cooking. Simply assemble in little time. I decided to use the Special K and make a tart shell from it. I combined the crushed Special K with a little melted butter and sugar and pressed it into tart cases before allowing it to set in the fridge. When you are ready to serve, you pop the Special K tarts out of their tart cases and fill them with…

Coffee pudding

How often does it happen that you’re planning a camping trip or a vacation to a self-catering apartment somewhere and you have to pack a million different containers for all the different food stuffs you need to take?  Sugar, milk, coffee…no more. With Cafe Enrista’s nifty and convenient sachets, all you need is boiling water. The coffee comes with sugar and creamer in a super convenient packet ready to tear open and add hot water to. What more do you want when you’re sitting around a bushveld fire or on a long road trip? All you need is a hot water flask. I was sent an enormous basket of goodies…

Banana Cream Pie

This is the second week that I’ve started off with a dessert recipe, but during Winter, sometimes that’s all you need. And this being my birthday week, it’s even more justified. Banana Cream Pie is something I’ve been dying to try. As I’ve mentioned before, I have quite a fascination with American food and I’ve ventured into it just slightly. We only recently got The Food Network in South Africa and I’ve been kind of hooked on some of those shows. Some, I don’t care for as much but The Barefoot Contessa (Ina Garten – I love you!) and Diners, Drive-ins and Dives have been two of my favourites. DDD…

There are days where writing a long blog post is just not necessary. Today is one of those days. This chocolate pudding is simple, delicious and satisfying and that’s all you need to know about it. It will warm every little part of you and you’ll be feeling a lot better about winter after a big serving with whipped cream! You’re welcome! Serves 6-8 2 cups flour 2 tsp baking powder 3/4 cup cocoa powder 2 cups caster sugar 4 eggs 2 cups milk 2 tbsp strong instant coffee (I warm the milk and then dissolve the coffee in it) 4 tbsp (about 100g (3.53 ounces)) butter 100g (3.53 ounces)…

Marshmallow Fridge Tart

If you consider yourself a food purist / food snob or someone who only eats at fine dining restaurants, look away now. Because what I’m about to share with you, might shock you. Over the last few weeks, I’ve been going through my mom’s mountains of cookbooks stored all over our house. I need to clarify first of all that my mom was a hoarder of note. Everything and I mean everything was kept. She even had a piece of paper in the side of her door where she would rub our kisses on when she dropped us at school, so that they could me kept. So it will come…

Choc-Chilli Cake

I am the type of person who believes that fattening foods shouldn’t be tampered with. I don’t like the idea of low-fat Macaroni & Cheese or Diet burgers and chips. I think there is a reason that these things are so fattening, you are only meant to be eating them once every 2-3 months. Making them low-fat/low-sugar etc. takes the indulgence away. But I did a shoot for Avocado Magazine last week and I was asked to develop baking recipes for special diets. Lactose intolerant, gluten intolerant, diabetic, etc. I cam across the most amazing yoghurt cake recipe that is so low in fat but is probably the most moist…

Milk Tart

Milktart is yet another one of those proudly South African favourites. And boy, it sure is a favourite in this household. However, this is not a traditional recipe for milktart, this one has a bit of a twist. Instead of using sugar to sweeten the ‘custard’, I used condensed milk. It adds a lovely creaminess as well as  really great flavour that you can only get from condensed milk. And you know something is good when a very loud Afrikaans family all go completely silent while eating it. And that’s exactly what happened when I served this as dessert last week. I made the pastry for the crust myself but…

A few days ago, my husband and I had one of those days where absolutely NOTHING could satisfy our sweet tooths. And it didn’t help that we had nearly no sweet things in the house. As I was digging through my pantry like a crazy-lady (looking for a tin of Caramel Treat), I saw that I still had one box of “box-cake” left over from my birthday.  I grabbed it, knowing that it wouldn’t completely satisfy my sweet tooth, but it had to do. I whipped up the batter, got them into the oven in their mini loaf tins and waited patiently. And then I spotted the bananas. I immediately…
