Nigella's Mughlai Chicken

When I first saw Ms. Lawson cooking this recipe, I was smitten. I love a good curry and when I saw that this one was very similar to my all-time favourite, Korma, I knew I would be trying it soon. Fast forward a couple of years, and I completely forgot about this version, until a repeat of the program was on one rainy day and I was reminded of it. For once, I had all the ingredients in the house and decided to go ahead and make it immediately. I was also quite happy that I wouldn’t have to make two different curries like I always do, one spicy and…

Butter Chicken Grilled Chicken Thighs

As you might know if you’ve reading my blog for long enough, I adore a good curry. Butter chicken is one of my favourites. But the problem with living in Pretoria is that you are almost guarenteed that from September it’s going to be hot, hot, HOT! There are days where the weather plays along and it’s beautiful and mild but last week, we experienced a heat wave like I’ve never experienced. I would sleep with wet towels on me with the fan blowing on me. If I didn’t, I would wake up to a soaked pillow. This heat wave doesn’t exactly go hand-in-hand with a good curry, not in…

Beef Penang Curry

As I mentioned a week or so ago, I’m having a bit of a love affair with Beef shin at the moment. I can cook with it day in and day out and I’m never disappointed! After making stews, soups and pies with it, I wondered how it would be in a curry and last night, I decided to try just that. When my husband and I was in Malaysia in 2007, we stayed in the picturesque Cameron Highlands for the first 7 days where we were treated to the most incredible food and service I’ve ever come across in my life. Everyone in the resort knew our names and…

Chicken Curry Soup

Today, it is Freezing in Pretoria. Absolutely toe-numbing, teeth chattering freezing. And the only thing I want to do is jump back under the covers with a bowl of this soup…even though it’s only 07:40am. When I told some friends that I was making Chicken Curry soup, the response was quite amusing. Some said it sounds good, some said it sounds strange and some just nodded and smiled. Trust me on this one, this is incredible. It really is just a basic chicken curry recipe that I added extra chicken stock and cream to. It’s that simple. And I decided to make Naan bread with it which is just as…

_MG_0601-2

I’ve said it many times before and I’ll say it again, I love India. I’ve never actually been there but my mind has been taken away on a Turmeric flavoured cloud many times in my life. I love the vibrant colours, the intense aroma’s and the beautiful Sari’s. I would easily walk around in a blinged-out Sari with jewels dripping off of me everyday. I wouldn’t say Indian cuisine is my absolute favourite but it’s definitely in my top 3. There is just nothing like walking into a kitchen where a pot of curry is on the stove. The smell is intoxicating and I am almost always reduced to a…

Lamb Bunny Chow

So, as you might have read in yesterday’s post, I baked bread for the first time but knew that I would have to incorporate it into a meal so that I don’t chicken out. And  a bunny chow was just the most obvious thing to make. Bunny chows, a proudly South African meal, is a 1/4 or 1/2 loaf bread, hollowed out with curry in the center. Bunny chows are probably one of my all-time favourite ways to eat curry. The origins of Bunny Chow are not quite clear but it is believed that the workers from the sugar cane fields in Durban, South Africa, needed a way to carry…

Creamy Chicken & Potato Curry

It seems like winter is finally on his way out of Gauteng. Even though I am incredibly excited to start making salads and REALLY excited to have sweet watermelon in the house, I got a bit panicky. You see, I don’t make stews and curries in summer. Well very, very rarely anyway.  I just can’t stand over a hot stove when it’s so hot outside that I could actually cook the curry on the pavement. So last night, I just knew I had to make some curry to bid winter a hearty farewell. I will miss him again in December when it’s too hot to breathe, but for now, I…

Spicy Cream Prawns

If you’re a regular reader on my blog you’ll know that I love prawns. I could eat prawns every day and not get sick of it. My favourite way of eating prawns involves Garlic and lemon butter, home-made chilli sauce and juices running down your arms. And yes, I do suck on the shells and the heads…it’s delicious and I don’t care if you think it’s disgusting. There is, in my opinion, no other way to eat prawns. Most of the flavour is in the shell after all. But I also love it in a sauce over pasta or rice. And then of course, I absolutely love Prawn Curry. The…

budget lamb curry

Once again, I’m aware that lamb is not the cheapest cut of meat therefore a lot of people don’t buy it. But it sure is nice when you find some lamb on special and you can make something seriously delicious but still budget-friendly with it. I find curries and stews to be the best money-saver dishes out there as the meat is usually the cheapest of all the cuts. You can also use relatively little meat and just bulk the dish up with vegetables, which adds nutrition and flavour. That’s what I’ve done with this curry. You could use less meat if you please but with this amount it’s quite…

Birthday Feast, Part 1

So 2 days after the massive Indian themed birthday feast, and I’m still tired. But I could not have had a better birthday. The curry night went so incredibly well and my family and friends could not stop raving about how delicious everything was, every cooks dream! I got compliments about the decor, the martini’s and let’s just say, my family grew uncharacteristically quiet while eating the creamy and decadent chocolate mousse. I was very, very happy! I got some more Exclusive Books vouchers and added the lovely Comfort by Tina Bester to my cookbook collection. After BAKE, I knew I had to get her latest offering. And as I…
