Easter Cupcakes (Chocolate & Coconut)

When it comes to baking, cupcakes must be one to the easiest things to throw together and with these easy recipes, you have no excuse not to spoil your family this Easter. The chocolate cupcakes are super moist and to decorate them I simply piped the icing in a ‘nest’ around the top of the cupcake and then filled the hollow with colourful speckled eggs I bought. They look adorable and kids and adults alike will fall in love with them. The coconut cupcakes are delicate and light with a lovely coconut flavour. I like topping it with shredded coconut (which you can toast in the oven for a…

apple pie-3

Winter is now in full swing in SA and I crave comfort food day in and day out. One of the foods I crave most often is warm Apple Pie with its cinnamon and nutmeg fragrance wafting through the house served with a dollop of double cream. Yum! That’s exactly how I came up with the idea of this cupcake. I really like the chunks of apple in the cupcakes and the fact that it really does taste like Apple pie. I added cinnamon and a pinch of both nutmeg and cloves to the cupcake batter to ensure I get the spiciness I so love. I wanted to mirror that…

Soft Serve Cupcakes

During Winter, there are often days where I long for the beach (as I’m sure is the case with a lot of people). I long for that slight salt taste on my lips, the smell of sunscreen and the joy I feel watching my kids play in the water. I also long for the taste of sweet, extremely creamy Soft Serve ice cream. Preferably with chocolate dip and a flake. So when thinking of new ideas for cupcakes, I thought a Soft Serve Cupcake would be an awesome idea. Combining two of my great loves? Genius! During the process of experimenting, I made the stupid mistake of adding cream to…

Peanut butter-chip Cupcakes

This week is well and truly turning into Cupcake Week here on Simply Delicious. But for some reason I don’t think too many people will mind. I think a cupcake is one of those things that most people love (even though I know of a few people who don’t). For me, a cupcake (a good one) is just perfection. I normally struggle to finish a big slice of cake but a cupcake? Never! And I love how easy it is to make a cupcake look adorable, beautiful and elegant. It really can fit into whichever scenario you place it in. The Peanut butter-Chip cupcakes are my husband’s absolute favourite and I…

Black Forrest Cupcakes

Over on Food24, the editor has set a challenge for one and all to create the most delicious, beautiful cupcakes. I was delighted when I heard this as I’m quite the Cupcake Queen amongst my friends and family. When I was pregnant I had to stop working (I was a make-up and hair artist) and the sitting around drove me insane. I started baking cupcakes to keep myself busy and soon I started getting orders to make ‘couture’ cupcakes.  Being fresh out of the glitz and glamour of working on shoots and fashion shows, I embraced this and poured my creativity into decorating and designing simple yet beautiful cupcakes. The…

Chocolate Cupcake Strawberry Frosting

If you don’t know that Valentine’s  Day is right around the corner, you must be living under a rock. Every shop, TV channel or Radio Station advertises it. Even Anti-Valentine’s Day products are being advertised. And if you thought you were getting away from it here, you are, unfortunately, wrong. I have to clear up though that I am not a massive fan of Valentine’s Day. Firstly because I think it puts a lot of pressure on people (single and attached) to buy ridiculously expensive flowers and gifts and if you DON’T have a ‘Valentine’, you feel like a loser. I know you say you don’t, but I’ve been there,…

Tombstone cupcakes

Even though us as South Africans don’t celebrate Halloween with quite the same gusto as other nations, especially Americans, I still try to do a little something for it every year. Usually my older brother and his wife have Halloween parties but for some or other reason (having young twins) we can never go. But I’ve decided that next year, come hell or high water, I will dress up as a green/sexy witch (does such a thing exist?) and I will celebrate Halloween properly. Now I also know that a lot of South Africans think that Halloween is “the devil’s birthday’” or something equally ridiculous. For once and for all…it…

Mother's Day Cupcakes

So as it’s Mother’s Day on Sunday, I thought I’d bake some cupcakes to celebrate (seeing as my twins aren’t capable of baking yet). And I think you should too! Any mother will feel so completely spoiled and loved when presented with a platter of these simple but delicious beauties. Make sure to make them extra girlie with flowers, hearts and glitter. Mother’s Day is a very bitter-sweet day for me. It’s such a special day because I have the most gorgeous twins on earth to spend it with but it’s also a very sad day for me, because my own beloved mother isn’t here to spend it with me….

Coconut Cupcakes

This is the perfect treat for such a grey, dreary morning. Sweet and comforting with just a hint of Island flavour to remind you of days spent on the beach. They are very easy to make and the end result is quite a dense little cake which hasn’t lost it’s moisture. If you can, use the Coconut Flakes from Woolworths. They just give another dimension to the cupcake, dessicated should be fine but I just prefer the flakes. This is Martha Stewart’s Recipe: (the frosting recipe is my own) 3 cups cake flour 2 teaspoons baking powder 1 teaspoon salt 1 1/2 cups unsalted butter, room temperature 2 1/4 cups…

Rooibos Tea Cupcakes

This really is the cutest thing to serve with tea…the cupcakes ARE the tea The flavour of Rooibos in these cupcakes is definitely noticeable but not so much that you get sick of it after the first bite. The icing has most of the rooibos flavour but I add it to the cake as well to give that beautiful Rooibos ‘tea-stained’ colour. The icing takes a bit of effort as you have to make a rooibos ‘syrup’ but it’s well worth it. Makes 12 200g (7.05 ounces) Cake flour 150g (5.29 ounces) Cazstor sugar 125 Butter, Room Temperature 125ml (4.23 fluid ounces) Strong Rooibos Tea with 1tbsn Honey mixed in…
