I really love simple dinners where the ingredients are fresh as can be and it takes you a maximum of 20 minutes to knock everything together. Last night I made a simple pan-fried fish (hake) for dinner and instead of the usual garlic butter or simple lemon to serve it with, I decided to make a light lemon-cream sauce flavoured with pepper and garlic.   The sauce complimented the fish beautifully and added just enough flavour without overpowering the delicate hake. As a blogger, I feel that I have a duty to make sure the recipes I post on this site are not just of good quality but also appealing and interesting. I’ve got a fascination with American Food. Not burgers, fries and deep fried butter (yes, such a thing does exist). No, I’m interested in the real cuisine of America. Long before Jamie’s American Road Trip, I was interested in the dishes that I’ve heard about, seen on tv and read about. Now I know this doesn’t sound budget friendly AT ALL. Bacon is ridiculously expensive and mushrooms aren’t exactly the cheapest vegetable out there. But for 4, this is actually a really reasonable dish. And it helps that it tastes so good. This is the one dish that will debunk all the myths that budget cooking has to be boring and bland. The sauce has plenty of bacon and veg and it’s absolutely silky and creamy (without adding any cream!). Usually I would add 250ml (8.45 fluid ounces) cream and loads of cheese to this which obviously ups the calorie content as well as the price so this is a win-win…
