Chicken & Chorizo Pie

Chicken pie is one of my ultimate comfort foods. Probably because my gran made a killer chicken pie and always had an enormous one standing proudly amongst the roasts and delicious vegetable dishes for our Sunday lunches. My gran’s chicken pie was always something rather majestic. She made sure the edges were beautifully crimped but ensured me she did so in a casual manner; the filling was always rich and fragrant with hints of nutmeg, cloves and white pepper. I also loved how she wasn’t shy with the filling and made sure that there wasn’t a ton of pastry compared to the amount of filling. I’m a pastry lover…

Summer Calamari & Chorizo Stew

I know, I know…Stew in Summer? I know you’re thinking I must be insane. But I’m not. This is quick to make and light to eat. Not exactly the kind of stew most of us are used to. I know that everyone wants light, fresh and fast meals in Summer because it’s too hot to stand in the kitchen for hours. But every now and then you still need that little bit of comfort that only a bowl of saucy stew can give you. This is the perfect Summer substitute. I’m not lying when I said this took me 10 minutes to cook. If you want to serve it with…

Spicy Chorizo & Bean soup

Bean Soup. That really doesn’t appeal to me. It sounds brown, thick and kind of drain-water-ish. But add the words spicy and chorizo, and you’ve got a winner. My dad has been asking for bean soup for ages now and I just didn’t know how to make it so that he wouldn’t be the only one eating it at the end. I’m not completely opposed to beans but I would prefer something else and my husband and brother really don’t like beans so it was quite a challenge. But I know we all LOVE Chorizo and spicy food so I thought that would be the only way to get them…

Gnocci with Chorizo & Peas

I saw the idea for this in the “Sarie Kos”. I didn’t really look at the recipe, just the pic but it looks pretty much exactly the same. I’m giving you my recipe for it because I probably added/left out some stuff. It was really delicious and something you can make in 20 minutes. Very satisfying and very delicious. Serves 4-6 1kg (2.2 pounds) Gnocci 1 Chorizo sausage, halved and sliced 1tsp Crushed Garlic 2 cups Frozen Peas 250ml (8.45 fluid ounces) Cream 250ml (8.45 fluid ounces) Milk mixed with 1tbsn Cornflour 1/2 tsp Paprika Squeeze of Lemon Juice Salt & pepper to taste In a large saucepan, fry the…

Calamari & Chorizo Risotto

So, for a while now I’ve been wanting to make Risotto. The first and only time I’ve ever made it was when I was 16 and although it wasn’t horrible, I didn’t know as much as I do now so I really wanted to try it. I’ve always stayed away from it because it seemed like too much work. But I got over my fears and just decided to DO IT!  So yesterday I went to the fishmonger to see what they had and I saw the chorizo and the calamari steaks and I just knew it would work! I was so incredibly excited! I bought Spigadora Risotto which came…
