Chicken Pie

As you might remember, I posted about the wonderful thing that is pastry last week. And I promised I would post my recipe for Chicken Pie. My first memories of Chicken Pie involves my gran, Sundays and a table buckling under the weight of the amazing spread she used to prepare for us. My gran’s chicken pie was always just the way it should be. Loads of filling with crisp and light pastry with a hint of cloves and nutmeg. Comfort is personified in my gran’s chicken pie. And although I don’t always follow her recipe, mine is not too shabby! I like to add different vegetables to my Chicken…

Coq Au Vin

Coq au Vin, like Boeuf Bourguignon, has been one of those dishes that I’ve been dying to make. Just the name conjures up images of the beautiful French country side, a mother lovingly chopping, sauteing and cooking a big pot of stew for her family. The whole family coming together and dunking crusty pieces of Baguette into all the rich, wine-flavoured juices. Of course, the picture back at home is a little bit different. Not only don’t I stay in the beautiful French country side but I also don’t have time to marinade the chicken for at least 24 hours, then brown it before adding back the marinade, frying the…

Chunky Chicken & Veg Soup

“ANOTHER Chicken & Veg recipe?”, I hear you ask! Well, Yes! I just love the combination of mild chicken with sweet vegetables and along with it comes that wonderful “Chicken soup for the soul” feeling. It really is just that. It also helps that they are packed with nutrients & goodness so it’s a guilt-free indulgence. Although this soup is more like a “Stoup” (Stew + Soup) because it was very thick and chunky. But if you prefer a more soup-like consistency, just add a bit more stock and whizz some of the veg in the food processor for a more silky feel. Of course I added chilli to my…

Easiest Chicken & Veg Curry

I think most of the people that read this blog regularly know that I have a complete and utter love affair with Indian food. With no other cuisine do you get the intense satisfaction that comes with comfort food with some added oomph from all the spices. It helps that I am a complete Chilli addict and that I add it to almost everything I eat. The ingredients lists of Indian recipes are almost as beautiful as love songs to me. Garlic, Ginger, Chilli, Ground Coriander, Cumin…. sigh…. Yes, I am inlove! And although I love a good Lamb Korma, filled with nuts, cream and yoghurt, sometimes you crave something…

Tandoori Chicken

This is the ultimate social food. Imagine platters of Spicy Chicken, stacks of Chewy Naan, Bowls of Cucumber & Onion pickle and loads of wine. It’s also a ‘eat with your hands’ kind of meal which is my favourite. Curried Chicken Bake.

This is probably the easiest thing I’ve ever cooked. Short of making toast that is… The quantities aren’t specific, I like to add as much or as little of each spice as I feel like. 2 Skinless Chicken thighs per person Enough Full Cream Plain Greek yoghurt to make A LOT of marinade (I used 1kg (2.2 pounds) for 14 small Chicken thighs) Honey Lemon Juice Cumin Coriander Turmeric Mild Garam Masala Hot Garam Masala/Chilli (I used Mother-in-Law spice) Salt Pinch of cinnamon Mix all the ‘marinade’ ingredients together. Taste to see if there is a good balance with all the spices, if it’s a little bitter, add more honey/lemon…

Sweet & Spicy Chicken on Sort of Waldorf Salad

Another Summer essential of mine, is Salad. I love it in every way, shape and form. I usually add grilled chicken to ours to make it more of a Substantial meal but even without it most salads are GREAT. Last night I knew  I wanted to make salad and I had Pecans, Granny Smith Apples and the usual salad stuff, so I decided to do a bit of a Ally-Style Waldorf. I unfortunately had no celery but it didn’t matter…this was GREAT. The Pecans, Apples and tangy mayo dressing worked PERFECTLY with the spicy chicken. Perfect Summer Supper. This is enough for about 4 people, if there are more, just…

Butter Chicken 001

I love any form of curry and I LOOOOVEEE Naan bread. So last night I knew I was going to be making Butter Chicken and I thought “let me attempt making Naan.” Well, I am soo happy that I did. It’s not quite the same as the Naan you get at Indian restaurants but I found the recipe scribbled in my Matric CookBook and it was so easy that I had to try it. Completely delish and worth the tiny bit of effort.Oh, the recipe i use makes A LOT of Butter Chicken so I usually only make it when we have guests or I just have it for lunch…

Creamy chicken liver pasta

I LOVE Chicken Livers, they are quite a regular in our household but they are usually done in the truly South-African way, in a Peri-Peri gravy and served with Fresh Breadrolls and lots of butter. However, this week I though I’d do something different with them and decided to make a Pasta sauce out of them. I just kind of tossed a whole lot of stuff together and the outcome was one of the nicest pasta sauces I’ve ever tasted. Serves 4-6 750g (26.46 ounces) Chicken Livers, Cleaned and Rinsed. 1 Large onion, finely chopped 4 Cloves Garlic, crushed 250g (8.82 ounces) Portabello mushrooms, chopped 250ml (8.45 fluid ounces) Cream…
