Sticky Indian Chicken

I saw a clip of Jamie Oliver cooking his “Sticky-Kicking chicken” online a week ago and just loved the teqnique he used for getting maximum flavour out of a humble little chicken thigh. Jamie rubs the thighs with Chinese 5-spice and then fries it in a hot pan until cooked and finally adds some sweet chilli sauce to the pan to create a delicious, sticky chicken. I loved this idea and decided to make it for dinner a few nights ago. The only problem was that I didn’t have any 5-spice in the house but decided to use a fragrant Garam Masala and honey instead. This is a perfect family-style…

I’ve said it before and I’ll say it again. I am completely obsessed with sandwiches. Bread in general, really. I mean, how can something stuffed between two slices of bread ever be bad? The sad thing is that bread is not the greatest of things to be addicted to and thus I have grown to love wholegrain breads that not only add necessary nutrients and fibre to your diet but also pack serious flavour. When Special K asked that I develop some Summer recipes for them I immediately thought of a sandwich but had no idea how I would include a cereal into a sandwich. I thought of baking…

Chicken & Chorizo Pie

Chicken pie is one of my ultimate comfort foods. Probably because my gran made a killer chicken pie and always had an enormous one standing proudly amongst the roasts and delicious vegetable dishes for our Sunday lunches. My gran’s chicken pie was always something rather majestic. She made sure the edges were beautifully crimped but ensured me she did so in a casual manner; the filling was always rich and fragrant with hints of nutmeg, cloves and white pepper. I also loved how she wasn’t shy with the filling and made sure that there wasn’t a ton of pastry compared to the amount of filling. I’m a pastry lover…

Thai Chicken Meatball curry

Autumn must be one of my absolute favourite seasons. I love that the mornings and evenings have a proper chill in the air while the afternoons are pleasantly warm. It is however a bit of a tricky season when it comes to food as you need something that is comforting without being heavy like a proper curry, stew or pie. This Thai meatball curry is exactly that. The fresh and zingy flavours work so perfectly well with the coconut milk and chicken meatballs and results in a meal that is comforting and warming without leaving you feeling weighed down. I like to make my own chicken mince by placing free-range…

After our 5 week long holiday, we are finally back in the land of the living. Even though I tried to post once a week, I still neglected my blog terribly, but it wasn’t all in vain. I think it’s good to take a break from blogging every now and then. Especially if you do it 5 times a week like me. But, I am back and ready to take on all the fabulous challenges 2011 has in store for me. First of all, I haven’t forgotten all your requests and I will be cooking myself through the list every week and of course I’ll be posting the results. Some…

Sticky Asian Chicken with Fried Rice

On my quest to eat healthier, I am constantly looking for new ideas and new ways with the same foods. We eat quite a lot of chicken in our house but chicken can be so bland and boring if you just cook it normally. I mean you can only eat so many grilled chicken breasts a week. Yesterday I had a SERIOUS craving for sticky and sweet chicken but how do you make sticky and sweet chicken healthier? It’s packed full of oil and sugar usually. I couldn’t do TOO much about the sugar but I removed the fat from the marinade completely and instead of using more fat to…

I’ve got a fascination with American Food. Not burgers, fries and deep fried butter (yes, such a thing does exist). No, I’m interested in the real cuisine of America. Long before Jamie’s American Road Trip, I was interested in the dishes that I’ve heard about, seen on tv and read about. Pumpkin Pie, Chicken & Dumplings and Gumbo are just a few of the dishes that I’ve always wanted to try. Recently I made Pumpkin Pie and it was really delicious, but how I wish I could eat it there, made by Paula Deen or the like. I’m also constantly on Martha Stewart’s website. There is NOTHING you can’t find…

I saw Jamie Oliver cooking this in his “Jamie at Home’ series and really liked the sound of it. Uncomplicated, delicious and easy food. Chicken is such a staple in our home and we eat it at least twice a week, and thinking of new ways to eat it becomes quite hard after you’ve tried it 300 different ways (this might be an exaggeration but I’m pretty sure it’s close enough to 300) . I don’t normally like cooked tomatoes that much (unless they are in a sauce etc.) but the sweetness of the cherry tomatoes works so well with the crispy, salty chicken skin. If it’s possible, I made…
