The first time I saw this on Martha Stewart’s site, I just loved the look of it. Simple ingredients, beautiful flavours and using mostly ingredients that everyone has in their kitchens. Except for the artichokes of course. Let me just clarify here that I have not and probably will never prepare and cook an artichoke from scratch. This is where my laziness gets the better of me and I just can’t imagine myself peeling, cleaning and cooking them. I am very happy to buy the marinated kind from good supermarkets or deli’s. Granted, they are not cheap but they are definitely worth it. It is the Festive season after all! Any…

Pecorino Crumbed Chicken

Sometimes, I don’t find it necessary to write a long post describing the dish I’ve cooked. Sometimes, all you need to do is look at the picture and know that this is going to damn good. Today, is one of those days. This pecorino (or parmesan if you prefer) crumbed chicken could not be simpler to make or more delicious to eat. Perfectly crisp coating, juicy chicken and the lingering flavour of good cheese is all you need to convince you to make this. Perfect as a light supper with a fresh salad or as a quick lunch served with some bread and home-made mayo. Simple and delicious!   Serves…

After our 5 week long holiday, we are finally back in the land of the living. Even though I tried to post once a week, I still neglected my blog terribly, but it wasn’t all in vain. I think it’s good to take a break from blogging every now and then. Especially if you do it 5 times a week like me. But, I am back and ready to take on all the fabulous challenges 2011 has in store for me. First of all, I haven’t forgotten all your requests and I will be cooking myself through the list every week and of course I’ll be posting the results. Some…

Spinach stuffed Chicken

I’m still working on getting my mojo back 100% but I find it hard to concentrate on cooking and recipe development when I have SO much other stuff on my plate. I’m planning a Nautical Baby Shower, a Vintage Candy Shoppe themed second birthday for my twins and our December holidays. While that’s going on I still have events to attend, I’m worried about my brother who is madly in love and writing his matric finals (never a good combination) and I’m trying to keep my family fed, bathed and just generally alive. Now I know what you’re thinking, especially if you are a working mother, “I do all of…

Grilled Chicken on Caesar Salad

Summer time = Salad time for me. We have salad as a main meal at least once a week in Summer. I absolutely adore salad in summer. And I’m loving all the new combo’s I’ve been trying lately. Now, I’m not a person who like fruit with meat. Especially NOT when it’s warm! But I am just infatuated with fresh mango, strawberries and nectarines in salads. This, however, I didn’t change much. Caesar salad is a classic that I believe shouldn’t be tampered with too much. The dressing is zingy, fresh and flavourful and the salad itself is kept simple with just some lettuce, croutons and parmesan. I added some…
