Gorgonzola & Candied Walnut truffles

The idea for this recipe came for me a while ago while I was eating Gorgonzola straight out of the fridge (as you do). I was crumbling pieces of Gorgonzola off the block and tried it with all different things from the fridge. Some grapes, a slice of apple and finally a sugar coated almond. All of them were just delicious. It’s no secret that Gorgonzola (and any blue cheese) goes really with sweet flavours and this got me thinking. With Festive season entertaining and cooking coming up, many people are looking for easy ideas to impress friends and family (and mother-in-laws) and often, you are not cooking a full…

Home-made Ricotta cheese

I have really fallen in love with Ricotta cheese over the last year or two, trying to work the delicate, curdled cheese into everything from Flapjacks with Blueberries, Sandwich toppings and rich fillings for aubergine involtini. At first, shop-bought Ricotta was just fine but in December I was browsing the Donna Hay iPad app and I saw her very easy recipe for home-made, fresh Ricotta. I promised to make my own and have just not gotten around to doing it until yesterday. I was a bit nervous to make my own cheese as I’ve never done anything like it (even though the recipe could not be simpler). It also didn’t…

Baked Fussili pasta with Ham and Cheese

I’m sure when you see I’ve posted yet ANOTHER pasta recipe you sigh and think, ” Really? Again?” But I just can’t help it. I think in this household, we’ve eaten pasta once a week for as long as I can remember. When we were little, my dad would call spaghetti “wurmpies” (little worms) and even though we only ever really ate it with bolognese sauce (remember, my mom wasn’t the most adventurous cook), pasta in and shape or form brings back intense memories for me. I think it’s mostly because I link pasta to my dad, and not only because he works with Italians and thinks he’s Italian half…

I’m sorry! I’m sorry that I’m posting yet ANOTHER Risotto recipe. But I just can’t help it. I’m sure you are absolutely sick of me and my Risotto recipes and me gushing over how amazing Risotto is, but unfortunately, I won’t be stopping that behaviour any time soon. Now, I don’t expect you to make this on a week night during ‘suicide hour’, but I urge you to make Risotto sometime, if you haven’t done it before. There is something so incredibly comforting and soothing about stirring chicken stock into rice and watching it transform fat, hard grains of Riso Arborio into creamy and oozy Risotto.  It’s intensely satisfying and…

Stuffed Potato small (1 of 1)

So as you probably know by now, my family and I are on holiday at the moment as South Africa is celebrating our wonderful Summer (although right now it’s more like Cape Town in Winter… rainy, windy and misty). We are incredibly fortunate to be in one of the most beautiful areas of the country close to the Garden Route. I know I promised posts about all the wonderful things we’ll be doing but honestly, I just don’t get time to spend in front of my laptop. If we’re not busy playing on the beach or exploring on the rocks, we’re eating ice cream or cooking something incredible! This holiday…

Spinach stuffed Chicken

I’m still working on getting my mojo back 100% but I find it hard to concentrate on cooking and recipe development when I have SO much other stuff on my plate. I’m planning a Nautical Baby Shower, a Vintage Candy Shoppe themed second birthday for my twins and our December holidays. While that’s going on I still have events to attend, I’m worried about my brother who is madly in love and writing his matric finals (never a good combination) and I’m trying to keep my family fed, bathed and just generally alive. Now I know what you’re thinking, especially if you are a working mother, “I do all of…

Pasta with peas, courgettes and feta

I was invited to the Simonsberg “Luncheon under the Trees” this week and I was absolutely ecstatic. Not only do I live for any type of foodie event, but I am the absolute biggest chees-aholic in the world. Now I know a lot of people like cheese, many even LOVE it. But I have never come across anyone who can eat as much cheese as I can. I am absolute certain that’s why I struggle with my weight, because I refuse to give up cheese. Most poeple who love cheese love a few different kinds but there is not one cheese I have tasted that I don’t like. Everything from…

Cheesy nachos with steak

It’s that time of the month again, the time where I need to get my Mexican fix. As you’ll remember from my Mexican Feast post, I have as much of an obsession with Mexican food as I do with Indian food. It must be because both cuisines are based on fabulous spices and fresh flavours. I’ve never actually asked anyone, but I’m sure there aren’t many people that don’t like Nachos. There must be something about oozy, cheesy covered chips served with creamy guacamole and a sprinkling of fiery chillies that make people swoon.  Well it definitely makes me swoon. You could make this with chicken, fish, ground beef or…

Mac 'n Cheese

Macaroni & Cheese is definitely the working mother’s stand by meal. 80% of the mother’s I know, who work every day, make this at least once a week. It’s easy, cheap and I’ve never come across a child that doesn’t eat Mac ‘n Cheese. My problem is that most of the time it’s floury, tasteless and unless you add about a cup of tomato sauce to it, you might as well be eating cardboard. And if you want to it to actually taste of something you have to add a ton of cheese to it which not only ups the price, but also the fat content. I’ve found that adding…

Potato & Cheese Pie

Yet another Carb-loaded dish. There’s not a single thing I can think of that’s better on a cold winter’s day than loads of warm and comforting carbs. Add some cheese and cream and you have comfort heaven! So when I saw the idea for this potato pie in the latest issue of F&HE, I knew I had to try it. I didn’t really look at the recipe, just the gorgeous photo and thus, my recipe is probably slightly different to theirs. I added loads of cheese to mine to make it really moorish and the end result was really delicious. I think this would be PERFECT with Sunday roast or…
