Beer & Bacon Mac and cheese

Not much needs to be said for this Mac & Cheese. Crispy bacon, beer and cheese all in one dish? Yes please! This might seem like it’s ‘bloke-only’ food but I have to say, I loved this so much I had seconds and found myself picking at the left-overs all night. I like to make a huge amount of this as there never seems to be enough but also because I love (LOVE) left-over Mac & cheese the next day. Re-heated with tons of chilli sauce, it’s one of my guilty pleasures in life. Serve the Mac & cheese with a zesty side salad and cold beers for a weeknight…

Fried Gnocchi (Nigella Lawson's Rapid roastini)

Last week, I receieved a copy of Nigella Lawson’s new book Kitchen to review from Kalahari.net. Now this isn’t my reviews, look out for that on Monday. But I couldn’t help but make this last night. I am a complete Gnocchi addict. I could seriously eat it all the time. I mean, what’s not to like about soft, pillowy dumplings? So when Nigella mentions that she came up with an idea to fry them, turning them into little sauteed potatoes, I almost died of happiness. I’m just extremely thankful that someone thought it was a good idea to put oozy, gooey cheese sauce on hot, toasted bread, because they were right. This has extra special meaning to me, because it was my mom’s version of comfort food. When I was sick, my mom would make me sweet, milky tea and toast smothered in butter and bovril. When I was sad, about boys or school or whatever the reason, she would make me Welsh Rarebit. There is just something about biting through salty, creamy…

Mac 'n Cheese

Macaroni & Cheese is definitely the working mother’s stand by meal. 80% of the mother’s I know, who work every day, make this at least once a week. It’s easy, cheap and I’ve never come across a child that doesn’t eat Mac ‘n Cheese. My problem is that most of the time it’s floury, tasteless and unless you add about a cup of tomato sauce to it, you might as well be eating cardboard. And if you want to it to actually taste of something you have to add a ton of cheese to it which not only ups the price, but also the fat content. I’ve found that adding…
