Apple & Polenta Cake

When I was in Cape Town for the launch and some publicity for my new cookbook, I visited a friend that I have been dying to see for a really long time. This friendship was started on Twitter (which is happening more and more often) and as I drove to her house, I couldn’t wait to see her home, meet the dog I had heard so much about and eat an apple cake she tweeted a picture of earlier. This friend is the incredible Errieda du Toit. Food writer extraordinaire and PR Queen and has so aptly called herself “Huiskok” (Home cook in Afrikaans). When I entered her house I felt right…

Milk Tart Layer Cake

As a proper Afrikaans girl, I find complete comfort in the smell and flavour of cinnamon. I’m not sure why it is but most of our (Afrikaans) comfort foods has cinnamon as an ingredient. Pancakes (crepes) is just not the same if it doesn’t have a generous sprinkling of cinnamon-sugar in the centre. The same with melkkos. And of course, milk tart. Milk tart is for me, the ultimate. I love how the creamy, custardy filling rests ever-so-gently on the crust. And that sprinkling of cinnamon just adds perfection.    I decided to make this cake because I wanted to do something a bit different with the components of Milk…

Tiramisu Cake

Tiramisu is one of my absolute favourite desserts. I love the creamy mascarpone and I love the mellow coffee flavour but what I love most is that it was one of my moms favourite desserts, and one she made incredibly well! My dad always jokes that my mom put so much alcohol in her tiramisu, after 3 bites you were drunk as a skunk! I remember one year at Christmas she made a huge dish of tiramisu but I never even tasted it…none of the kids were allowed in fact. She confessed that instead of adding a few tablespoons of Tia Maria, she actually added half the bottle! I also…

Chocolate-Amarula Crepe Cake

This is one of those show-stopper cakes that will impress your guests to no end. It does take a little work but it’s all very worth it. I first saw a crepe cake on Martha Stewart’s site and have wanted to try it ever since but knew I needed a special occasion for it and Easter is just the occasion I’ve been waiting for. You can play around with the flavours and omit the Amarula if you wish but it definitely adds a lovely creamy taste and flavour. I would love to try it again with lemon curd as a filling and a lemony glaze drizzled all over the…

cake2 (1 of 1)

Last week I attended a blogger cook-off hosted by Canderel to promote their new product, Canderel Yellow. I have to be honest, I’ve never been a fan of artificial sweeteners as they always have a nasty aftertaste that I just can’t get over, so I very rarely use them. But I was pleasantly surprised to see the the new Canderel Yellow granules not only look just like caster sugar, but also taste just like sugar, just a little sweeter. It’s made with Sucralose and is bake stable, which is very exciting for me as I just love to bake. I decided that the recipe I would use the new Canderel…

Old Fashioned Clementine Cake

When I was a little girl, I used to go with my gran to the University of Pretoria where both her and my mother worked (my mother was a lecturer in Criminology) and we would drink tea in the big conference rooms. Whenever I smell Rooibos tea I think of my gran. She used to add a cube of sugar and a good glug of milk to my dainty tea cup and she always had something baked for the occasion. I so long for those days of pretending to be all grown-up. My gran never actually baked this cake but I found this recipe in one of my mother’s old…

Peanut Butter Chocolate Cake

I’ve been craving good Chocolate cake for months now. Not the kind you buy at the Home Industry that’s already kind of dry but you eat it anyway. No, I wanted moist, rich, insanely chocolatey Chocolate Cake. And then a week ago I had this intense craving for Peanut-butter and I thought, why not put the two together. I have really great Chocolate Cake recipes but I wanted to try something a bit different and whilst browsing through Tastespotting I saw this amazing cake by Foodess.  Now I’m sure you’ll agree with me that, THAT cake, is probably the best looking Chocolate Cake I’ve ever seen. I fell inlove instantly…

lemon cake

One of the fondest memories I have of my mom is that she always made such a fuss about anything related to High Tea. For my 6th or 7th birthday, she threw me a “Little Ladies Tea Party”. All the guests were told by fancy invitation to wear their mother’s hats, pearls and high heels. She transformed our living room into a stylish “Conservatory” fit for a Princess, complete with little tables seating 4 girls each. She took out her expensive china left to her by her Grandmother and made us delicious Cucumber & Cream cheese sandwiches, miniature Quiche Lorraine and dainty cupcakes. I was in heaven. Another one of…

Choc-Chilli Cake

I am the type of person who believes that fattening foods shouldn’t be tampered with. I don’t like the idea of low-fat Macaroni & Cheese or Diet burgers and chips. I think there is a reason that these things are so fattening, you are only meant to be eating them once every 2-3 months. Making them low-fat/low-sugar etc. takes the indulgence away. But I did a shoot for Avocado Magazine last week and I was asked to develop baking recipes for special diets. Lactose intolerant, gluten intolerant, diabetic, etc. I cam across the most amazing yoghurt cake recipe that is so low in fat but is probably the most moist…

This is one of those recipes that came about by pure accident. I was meant to make truffles yesterday and everything was going great until I added too much orange juice to the truffle mixture. This morning when I wanted to make the truffles, the mixture was just ever-so-slightly too soft to roll into balls. So my mind started working over time as I just could not waste this deliciously silky chocolatey ‘mess’. And then it came to me, use it as the filling for a cake. The oven was switched on and the scale was taken out and off I went into baking mode. I used the German Chocolate…
