As I write this post, my teeth are chattering and my knees are shaking. It’s officially Winter! It’s been chilly for the last couple of weeks but this morning, my hot tea doesn’t seem to have the same power as it did a few weeks ago. But don’t think I’m complaining, not for a second! I’m a good and proper Winter baby. Born in the middle of Winter must surely have an effect on how you feel about the season and I just absolutely love it. By August I start yearning for the freshness and ‘lightness’ of Summer but other than that, I love everything about Winter. I especially love…

This past week we’ve had the most beautiful weather, warm and sunny during the days and only slightly chilly at night. But it seems like the cold front is hitting us and when that happens I need serious comfort food. Risotto is probably one of the most comforting foods out there but unfortunately I don’t always have the patience to stand in front of the stove stirring the pot (even though my friend, Chef to the celebs, Neill Anthony told me that boiling the rice for 8 minutes before making the risotto cuts the time down to almost nothing). The thing with baking risotto is that the end result is…

Chicken Cottage Pie with 3-Vegetable Topping

I am really not a fan of Cottage Pie. You see, I like a bit of texture to my food. I like when there’s something I can bite into or something that adds a bit of crunch, and with Cottage Pie, well there just isn’t. It’s all a bit baby food-y to me. So when one of my readers asked me for an easy cottage pie recipe, I was a bit disappointed because I knew I would have to make it to see if it was really easy and really delicious. I started thinking of ways to amp up the flavour but keep the cooking time to a minimum and…

Fettucini with roasted butternut, sage and goat's cheese

For this horrible cold-but-not weather we’ve been experiencing in Gauteng the last couple of days, this is the perfect dish. Just enough comfort to get you through but not heavy or too rich. I got the idea for this yummy dish from the new Nigella. She used Pappardelle and Blue cheese with her dish but I was craving the smooth and sharp creaminess of goat’s cheese so I knew that would be an obvious replacement. I actually can’t remember if she used fried sage, but I just love it so much I had to add it, after all, sage and butternut are meant to be together. This is one of…

Continuing with the budget theme, I thought, nothing is cheaper and more comforting than a good soup. Especially if you cut out the cream and you chop the veg yourself. I have a weakness for the already cut butternut in shops but this adds to the price and it’s unnecessary. If you have a good sharp knife and a good peeler, you can do it in no time yourself. Soup is also great because you can really use whatever you have in the house. Make a gorgeous and nutritious vegetable soup from left over carrots, celery, potatoes. tomatoes and a tin of beans. Add some chicken/beef if you have it….

Butternut & Feta Canneloni

I know this looks like lasagna, but I assure you, it’s Canneloni. As you’ll recall, I love stuffing things. Poultry, vegetables and pasta are my favourites. And because I haven’t stuffed anything (other than my face) in the last few weeks, I thought it’s about time. I don’t like stuffing Canneloni with a bolognese type sauce, as I feel that really makes it too similar to lasagna and you might as well save yourself the time and do it that way. So I decided on doing another vegetarian meal and used my beloved butternut & Feta. So off I went roasting the butternut, mashing it with feta cheese and loads…
