As I write this post, my teeth are chattering and my knees are shaking. It’s officially Winter! It’s been chilly for the last couple of weeks but this morning, my hot tea doesn’t seem to have the same power as it did a few weeks ago. But don’t think I’m complaining, not for a second! Continuing with the budget theme, I thought, nothing is cheaper and more comforting than a good soup. Especially if you cut out the cream and you chop the veg yourself. I have a weakness for the already cut butternut in shops but this adds to the price and it’s unnecessary. If you have a good sharp knife and a good peeler, you can do it in no time yourself. Soup is also great because you can really use whatever you have in the house. Make a gorgeous and nutritious vegetable soup from left over carrots, celery, potatoes. tomatoes and a tin of beans. Honey Roasted Butternut & Orange soup

This is of course the season for soups, stews and curries and with it suddenly being sooo cold in Pretoria, I thought I had to make us a good, comforting soup last night. I absolutely adore any form of Butternut soup and I’m constantly thinking of new things to add to it or different variations. Last night I decided to roast the butternut with a good drizzle of honey and I also added some carrots and sweet potato to add sweetness, flavour and colour. It came out exceptionally well.
