Lasagna Cups

I know this looks terribly fiddly and like it’s going to be way too much trouble for a week night. And in some ways, it is. Because of that, I decided to eliminate the whole bechamel/cheese sauce part of normal lasagna making and substituted it with a very easy creme fraiche ‘sauce’ which can be made in a minute. To save even more time, you can buy ready-made fresh lasagna sheets. They aren’t easily available but I’ve seen them at a few supermarkets and I know Food Lover’s Market has most of the time. This just makes this recipe even easier to do as you don’t have to worry about…

Vegetable Loaded Sloppy Joe's

Yet again, my obsession with America and it’s food got the better of me last night and I just had to make Sloppy Joe’s. I’ll never forget once watching Adam Sandler’s “Billy Madison”, I was probably about 13 and I thought this movie was the funniest thing I had ever seen. One thing I’ll never forget was Billy and his primary school friends eating Sloppy Joe’s in the cafeteria. They didn’t look advertising at all and were served by a disturbing lunch lady, but I was intrigued. I begged my mom to allow me to make them. She reluctantly agreed but tried very hard to get me to add onions, carrots and…

Not only is Spag Bol the staple of mothers everywhere, but it’s also got a comfort level not easily met by anything else. After all, pasta in every shape and form equals comfort, no? I have always veggie-loaded my Spag Bol to boost my family’s 5-a-day intake. I always, always, ALWAYS add fresh carrots, onions and garlic. Sometimes peas and corn, sometimes green beans or broccoli. But when I saw Carey using fresh baby spinach and rocket, I almost weeped. There’s just no better way to take this, usually winter-y dish and…

I think Spaghetti Bolognese is a staple in every single household. Especially in households where both parents work full time. It’s easy, delicious and most children can’t say no to a big bowl of Spag Bol. But I have to say, I get bored quite easily of regular Beef mince so I like mixing it up and as I fell in love with Lamb Mince not so long ago, I knew it would jazz up this old favourite. The lamb adds a definite flavour to the finished sauce and I think the meat is more tender and moist, but it doesn’t make the Bolognese un-recognisable. Lamb Mince can be quite…
