  After watching one of my newest cooking show addictions, Meat & Potatoes (Food Network) this weekend, I was left inspired and motivated.   It’s confession time. Along with all my other food obsessions, I can now add sandwiches, in every way, shape and form to that list. Bacon, feta & tomato quiche

I’ve said it once and I’ll say it again, I LOVE QUICHE. For me, there is nothing better on a warm night than eating delicious quiche with a crisp salad. I was so not in the mood to cook dinner last night. All I wanted to do was watch Oprah (yes, I watch Oprah…stop judging!) and do nothing. budget bacon& mushroom pasta

Now I know this doesn’t sound budget friendly AT ALL. Bacon is ridiculously expensive and mushrooms aren’t exactly the cheapest vegetable out there. But for 4, this is actually a really reasonable dish. And it helps that it tastes so good. This is the one dish that will debunk all the myths that budget cooking has to be boring and bland. The sauce has plenty of bacon and veg and it’s absolutely silky and creamy (without adding any cream!). Usually I would add 250ml (8.45 fluid ounces) cream and loads of cheese to this which obviously ups the calorie content as well as the price so this is a win-win…
