Everyone needs a simple but stunning pasta recipe to pull out when inspiration has packed its bags and have bid you adieu. One of my favourites is the Roasted cherry tomato, ricotta & basil pesto pasta which I’ve cooked more times than I can remember. After a while though, these pastas become more of a staple than they should and you start getting tired of the tried and tested combination. As I needed a new pasta recipe (because I’ll be honest, I feel like my mojo is very slowly trickling out of me as we get closer to the end of the year), I decided to create this pasta.  …

Beer & Bacon Mac and cheese

Not much needs to be said for this Mac & Cheese. Crispy bacon, beer and cheese all in one dish? Yes please! This might seem like it’s ‘bloke-only’ food but I have to say, I loved this so much I had seconds and found myself picking at the left-overs all night. I like to make a huge amount of this as there never seems to be enough but also because I love (LOVE) left-over Mac & cheese the next day. Re-heated with tons of chilli sauce, it’s one of my guilty pleasures in life. Serve the Mac & cheese with a zesty side salad and cold beers for a weeknight…

Bacon & Egg rolls with pesto

Today, I won’t be giving you a lengthy post abut how fabulous this dish is. I’ll let the pictures do the talking. Just imagine a soft, oozy egg on top of crisp, salty bacon in a soft roll flavoured with chilli, basil & almond pesto. Simple and perfect. Print Bacon & Egg rolls with almond & chilli Pesto Recipe type: Breakfast, Main, Prep time:  10 mins Cook time:  20 mins Total time:  30 mins Serves: 2   Ingredients for the pesto 100g (3.53 ounces) blanched almonds 80g (2.82 ounces) basil leaves, stems removed 1 clove garlic, peeled ½ – 1 chilli, roughly chopped ½ cup olive oil ½ cup grated Pecorino cheese…

Risotto with peas & bacon (Risi e Bisi)

I have to be honest, one of the main reasons I like to make Risotto with Peas & Bacon is so that I can tell everyone eating it that it’s actually called “Risi e Bisi” (the Italian name). Doesn’t that sound too adorable for words. Risi e Bisi.. I just love saying it. But that’s not the only reason I love making it. I have quite a fascination with how well peas and any form of pork (especially smoked) works together. And adding that combination to creamy risotto, well that’s just genius! I’ve been told to make less risotto as my family is all risotto’d out. (wait, what? How can…

After watching one of my newest cooking show addictions, Meat & Potatoes (Food Network) this weekend, I was left inspired and motivated. I’ve said before how much I like Diners, Drive-Ins and Dives with Guy Fieri and Meat & Potatoes follows that same guideline, but amps it up a bit by visiting fine-dining establishments as well as the hole-in-the-wall kind of places. And then of course, the focus is on all types of meat & potatoes. This weekend’s episode showed the awesome Josh Henderson of Skillet Street Food making his bacon jam which he serves on burgers with Gorgonzola cheese. “Bacon JAM?” I hear you ask. Yes! Bacon Jam….

The Ultimate BLT-Sandwich

It’s confession time. Along with all my other food obsessions, I can now add sandwiches, in every way, shape and form to that list. I’m not talking about a cheese sandwich on ‘plastic’ bread or a regular peanut butter & syrup sandwich, I’m talking about good quality breads topped with simple but great ingredients cooked/prepared with love and attention. It’s almost impossible to go wrong when you follow those guidelines. Another confession, I never liked BLT sandwiches. They were always sub-standard and almost bland, the bacon being the only component to add any flavour. I felt the tomatoes washed out all the flavour and so steered clear of them…

Smooth Vegetable soup with Bacon & Feta

During the colder months, sometimes all you need to warm your tummy is a bowl of good soup and a chunk of crusty bread. There is no easier meal during the winter months than soup, even if it takes a while to cook. And if you have a slow-cooker, then you have even less excuse. When making soups, it’s very important to remember that the two main components that make up the soup, need to be of the best quality you can afford. In this case, the vegetables I chose are in season and organic. I do understand that buying organic isn’t cheap and I am definitely not going to…

Bacon & Cream Cheese Burger

I know, your arteries are clogging up just by looking at this photo right? I am the first to admit that this is not the healthiest thing on earth. Gosh, it’s probably the unhealthiest thing you could eat but what am I to do when it’s my husband’s birthday and he’s favourite thing is Bacon? I need to clarify though, that my husband is not a ‘foodie’ . He has a few things that he likes and a few things that he doesn’t, but in general he’ll eat anything I put in front of him and he’ll do it with a smile on his face (he better!) .  And, my…

Stuffed Potato small (1 of 1)

So as you probably know by now, my family and I are on holiday at the moment as South Africa is celebrating our wonderful Summer (although right now it’s more like Cape Town in Winter… rainy, windy and misty). We are incredibly fortunate to be in one of the most beautiful areas of the country close to the Garden Route. I know I promised posts about all the wonderful things we’ll be doing but honestly, I just don’t get time to spend in front of my laptop. If we’re not busy playing on the beach or exploring on the rocks, we’re eating ice cream or cooking something incredible! This holiday…

Bacon, feta & tomato quiche

I’ve said it once and I’ll say it again, I LOVE QUICHE. For me, there is nothing better on a warm night than eating delicious quiche with a crisp salad. I think the love of this combination stems back to when I was a little girl and my mother used to take me to Tiffany’s, a little coffee shop in the mall close to us. She used to order Quiche Lorraine and it always came with a green salad with the most AMAZING salad dressing. I remember licking the cucumber and lettuce, to the utter embarrassment and disgust of my poor mom, just to get the salad dressing off. I…
