Grilled asparagus & haloumi salad

With the Festive Season right around the corner, I find myself thinking about easy, quick and delicious side dishes to serve with the abundance of grilled meats we usually have in this time. As we celebrate Christmas in a country that is hotter than hot in December, it makes sense that most of the celebrating will happen around a fire ready to braai lamb chops, steaks and boerewors. And even though the meats might be the main attraction, a braai just isn’t a braai without good side dishes. The average braai always has a mixed salad and a potato bake of some kind but I’m trying to venture further and…

Poached eggs on Asparagus with hollandaise

I’m slowly but surely making my way back into blogging. And before you ask, I’m not allowed to discuss the reason I’ve been taking a break from my blog. I will soon though and believe me it will be worth the wait. What I can say is that I am going to need a serious holiday after all of this. But back to this post and one of my favourite breakfasts. I’ve been making hollandaise with eggs whenever I can this year as it’s always delicious and guests always seem to be impressed with the luscious hollandaise that gently lays over the poached egg, like a comfortable blanket. Linguini with Prawns & Asparagus

I don’t really like Seafood Pasta’s. Mainly because I don’t like Tomato based sauces. But last night I knew I had to make Pasta with the prawns I had as we had rice the night before and we are having rice again tonight with the Bobotie I’m making. I spotted the Asparagus in the fridge and thought I’d pop those in too. This took literally 15 minutes. Ok, it took me 30 minutes to clean the prawns because I HATE the ‘Pink Prawns’ you get from supermarkets and Fishmongers. They never taste of anything and go completely rubbery after just 5 seconds in the pan. The amount of prawns I…

fish and cake 043

I really love Dorado. It’s probably my favourite fish, so when my local fishmonger has it in stock I always buy it. I just simply panfried it sprinkled some fish spice on and served it with Roast Baby Potatoes, Steamed Asparagus and a delish Garlic and Anchovy butter. It was SCRUMPTIOUS! For the Anchovy Butter you’ll need: (this is enough for 8 people) 1 cup Butter 2 Garlic cloves, mashed (or you can just use Garlic Paste) 4 Anchovy fillets Squeeze of Lemon Black Pepper Combine all the ingredients and heat in the microwave for about a minute until the butter is melted. Stir until the Anchovies are broken up….
