Smoked Snoek Fish Cakes

As someone who loves fish and seafood I was surprised when a reader asked me for a recipe for fish cakes a while ago. I realised that I don’t have one! I have always liked fish cakes but for some reason, I’ve never made them for my family which is really quite bizarre as they are easy, delicious and served with a salad, they make a really great week-night meal! I set out to develop my recipe and thought of using smoked snoek only because I love it so very much. You can use smoked mackerel or smoked haddock as well if you can’t find smoked snoek but the snoek…

If I could only choose one breakfast to eat for the rest of my life, it would be Eggs Benedict. Sure, I wouldn’t be able to move after a while as the hollandaise alone is enough to make me gain weight by just looking at it, but I almost don’t mind. There is just something about the silky, butteriness of hollandaise that makes up for the fact that it’s so fattening. When I eat hollandaise I feel very much like Julie Powell in Julie&Julia when she says eating an egg is like eating white sauce. It has that same velvety texture and delicate flavour, and that is exactly what…

Pita chips with Taramosalata

When you plan on serving something like taramosalata, you want to be sure that whatever you are serving it with is going to be a blank canvas to carry the incredible flavour of the taramosalata without over-powering or altering it. That’s why I decided to serve the tub of Mediterranean Delicacies Taramosalata with pita chips when I had guests over recently. The pita chips are incredibly easy to make and require no recipe. The way they go slightly crispy but still stay chewy is just wonderful and dipped into the aromatic and flavourful taramosalata, they make a great snack with drinks! You will need: 1 pita bread per person, cut…

Lighter Smoked Salmon Pasta

After this last week, I needed something fresh and light. I don’t know about you, but with all the public holidays and Easter in South Africa, I ate non-stop. It also didn’t help that we had a few very icy days where all you want to do is stay indoors, snuggled up on the couch with cake and hot chocolate. So when dinner time rolled around last night, I knew I needed something light but yet again, it’s winter so I wanted some comfort. My mind immediately went to pasta and it just so happened that I had some lovely Smoked Salmon in the fridge so I knew that would…

Thai Fried Rice with Prawns

Last week while I lazily lied on the couch watching, you guessed it, cooking shows, the lovely Bill Granger was working his magic in the kitchen. He has this amazing ability to make me feel like I want to run away to Australia, buy a house on the beach, wear only white and light blue clothing and cook healthy and refreshing food all day. He just seems so insanely laid back and I imagine lunch at his house to feel like a mini-holiday. Everything seems so calm and soothing. So when Bill started his Thai Fried Rice I sat up a bit (ok, I just opened my eyes a bit…

Baked fish with Lemon Butter

You know you’ve got crazy family when your aunt arrives at your house from Cape Town with a giant Kingklip, wrapped in cling wrap and foil. Yes, it was frozen and YES, she did fly with it in her suitcase from Cape Town. I was very grateful that she brought me such a nice gift but I was also shocked, and relieved that it didn’t start defrosting in between her clothes..yuck! Let me just start by saying that I KNOW Kingklip is considered Orange status on the SASSI list. I don’t buy it myself, ever, and I never order it in restaurants but this was a gift from a family…

Baked Crab Risotto

As you know, if you’re a regular reader of my blog, I am a complete Risotto Addict. I’m not ashamed of this, in fact, I embrace it. But I do know that I can’t eat it every day, or every week. But I do aim to eat it once a month. Even in Summer. But obviously, during the incredibly hot South African Summers, the last thing you want is a heavy and rich rice dish that will fill you up by just looking at it. This is the perfect combination between the comforting Risotto I know and love and beautiful fresh, Summer flavours. Now I know, crab is quite an…

Penne with Salmon & Prawns

Usually when I cook seafood pasta, the sauce is super creamy. That wouldn’t be a problem if I didn’t have to worry about my waist size…and the fact that 250ml (8.45 fluid ounces) cream contains about 90g (3.17 ounces) of fat. Eeeek!!! But my craving for a creamy, seafood pasta has been so strong the last couple of weeks that I knew I had to make it sometime this week. I knew I could make the sauce with low-fat evaporated milk or yoghurt but I just didn’t feel like that was going to be good enough. Until I remembered my new favourite, reduced fat cream. Now let me tell you,…

First of all, I’d like to congratulate Kiara Rossouw for winning Justin Bonello’s, Cooked Weekends Away. The book is on it’s way Kiara! If you didn’t win last week, don’t despair. This week we are giving away Antony Worrall Thompson’s GI Diet, thanx to Penguin Publishers. This really is a great book to have if you’re looking at eating healthier but not sure where to start. The book discusses the Low GI Diet in depths and gives a detailed list of low, medium and high GI foods. It also gives you loads of tips on how to make ordinary dishes low gi etc.The Recipes range from fabulous breakfast ideas like…

Summer Calamari & Chorizo Stew

I know, I know…Stew in Summer? I know you’re thinking I must be insane. But I’m not. This is quick to make and light to eat. Not exactly the kind of stew most of us are used to. I know that everyone wants light, fresh and fast meals in Summer because it’s too hot to stand in the kitchen for hours. But every now and then you still need that little bit of comfort that only a bowl of saucy stew can give you. This is the perfect Summer substitute. I’m not lying when I said this took me 10 minutes to cook. If you want to serve it with…
