Meatballs baked in tomato sauce on polenta

When I saw this recipe on one of my favourite blogs, Souvlaki for the Soul, a while ago, I knew I’d be giving it a go soon. I was just waiting for a cold day where the only comfort can be found in a bowl filled with delicious food. This recipe combines two of my absolute favourite things; Meatballs and soft polenta. I am a little obsessed with Polenta and I try to make use of this simple, versatile ingredient as much as possible during the colder months. It is perfect served with saucy, meaty dishes. I’ve heard a lot of people saying they don’t like polenta because of the…

Slow-roasted Balsamic beef sandwiches

When I saw the idea for this sandwich on Pinterest, it felt like I had met my soulmate sandwich. This might sound ridiculous but if you love sandwiches as much as I do, you’ll understand what I mean. I clicked through to the site and all I can say is that Robyn from Add a Pinch is a genius! Who wouldn’t drool at the thought of slow roasted beef flavoured with Balsamic vinegar? I decided to give my own twist to the recipe and made it up as I went a long and I have to say that this is one of the most phenomenal ways to cook a beef…

Pea & Gammon Frittata

I love making frittatas when I have left-overs as the frittata lends itself to any flavour combination and any ingredients. I used left-over gammon for this frittata and added sweet caramelised onions and frozen petit pois as a nod to the classic combination of ham and peas.  This really is a fantastic way to use the last of your Christmas Gammon and is great as brunch, lunch or even a simple supper with a zesty salad served alongside.   Print Pea & Gammon Frittata Recipe type: Breakfast, Lunch, Brunch, Eggs, Prep time:  5 mins Cook time:  15 mins Total time:  20 mins Serves: 6-8   Ingredients 1 onion, finely chopped 1…

Apple & Apricot glazed Gammon

As a teenager, the thought of Gammon repulsed me. Yes, I know that’s a strong word to use but it’s the truth. I hated the way the cold (this is the way my family served it), pink meat was covered in a sweet layer of jelly with pieces of pineapple and cherry in it. I’ve said before that (when I was younger) I hated meat with anything sweet and Gammon was the personification of that hatred. Nobody ever understood how much I disliked Gammon but they left me alone, saying that it was my loss. I was happy to indulge in the turkey and stuffing. Fast forward a few years…

Sticky Honey & Soy Pork Chops

Simpler than these incredible pork chops you won’t easily find! Whilst editing the photos for this post I started salivating thinking about the sticky, sweet meat flavoured with soy, ginger and a hint of chilli. So often I feel pressured (by myself) to create absolute masterpieces for dinner and I often forget that sometimes the simpler and more  straight-forward a recipe, the more rewarding the eating will be. And nowhere is this truer than with these delicious pork chops. Honey, soy, ginger & chilli is by no means a new combination but one that works so well with pork. And when paired with a simple salad of mixed leaves, sugar…

world-egg-day-2

(Thanks to my amazing husband Chris for creating this stunning image for World Egg Day)  As today is World Egg day, I decided to round up all my favourite Simply Delicious Egg recipes and share them with you. I adore cooking with eggs as they are incredibly nutritious and when cooked right, they are one of the most delicious things to eat. Silky, soft and almost cheese-sauce like, like Julie Powell said in “Julie & Julia”. I love them on their own, with asparagus and hollandaise, on a soft roll with bacon or on top of a stack of crunchy potato rosti’s. For breakfast, lunch and dinner. And so, here…

Fettucini Al Fredo

When I think of Fettucini Al Fredo, I think of the horrible restaurant variety. Over-cooked fettucini drowned in a stodgy sauce with flavourless ham and mushrooms. Not exactly appetising, but I come with good news. This is not the way it is meant to be and definitely not the way I cook it at home. A good Fettucini Al Fredo is one of the most delicious pastas you can make and is one of my all-time favourite comfort foods. The combination of crispy ham, perfectly cooked mushrooms and creamy sauce on top of al dente pasta is one that’s just too good to resist and is a favourite to many….

Curried Lamb burgers on naan bread with cucumber raita

I’ve made no secret of the fact that I’m a complete burger addict. If you need proof, have a look at my beef burgers with bacon jam, Mozzarella-Stuffed burgers or my Lamb & Hummus burger. I decided to expand my burger repertoire by doing something a little different. As you’ll know if you’re a regular reader of my blog, I’m also quite partial to the flavours of India and so decided to combine my two loves into one insane burger. I decided to flavour the lamb with red onion, garlic and a good heaped spoonful of good quality curry paste. Try to use a paste usually used for Butter chicken…

Stuffed Pork Belly roast with Apples & Sage

With snow present in most of South Africa this morning, it’s only fair that I share one of my ultimate roast recipes with you. This pork belly roast is not only delicious and comforting, but it also has serious wow-factor and will impress your guests to no end. The apple & sage stuffing is subtle and adds a quiet hum of flavour to the rich pork. I didn’t want to add breadcrumbs like you would with most stuffings as I didn’t want to add any heaviness. I wanted it there purely to flavour the pork and this is exactly what it did. I also loved how the sweet, almost tangy…

Slow-Cooked Beef brisket chili

Even though it’s still quite cold in the mornings and evenings, signs of Spring are popping up everywhere. Our “Yesterday, Today & Tomorrow” is sporting a few blooms, the leaves on the tree outside our bedroom window is starting to return and the air has that fresh Spring scent to it. Yet, I still yearn for foods cooked slowly until it is meltingly tender, and that is exactly what this slow-cooked beef brisket chili delivers. When I asked my butcher which meat I should use for a deep and rich chili he immediately suggested brisket and gave me a huge (read : Gigantic) brisket on the bone. He did offer…
