I saw a clip of Jamie Oliver cooking his “Sticky-Kicking chicken” online a week ago and just loved the teqnique he used for getting maximum flavour out of a humble little chicken thigh. So often after a lovely Sunday roast, I am left with left-overs and no inspiration. Up until a few years ago, I wasn’t a fan of cooking with fruit. I would even turn my nose up at a simple fruit salad. Quesidillas are my go-to meal when I need something quick, tasty and filling. I love it’s versatility and the fact that you an use absolutely anything as a filling. Autumn must be one of my absolute favourite seasons. I love that the mornings and evenings have a proper chill in the air while the afternoons are pleasantly warm.
