One of my food-fears is baking bread. I don’t know why but it terrifies me. I think it’s coz I’ve never worked with yeast and yes I know it’s easy etc. etc. but I am scared of it. Just like I’m scared of making my own pasta, poaching an egg and making mayonnaise. But I’ve made my own pasta (although tricky I did it), I’ve poached an egg (once again not the biggest success but it was atleast edible) and I’ve made Hollandaise sauce which is pretty close to Mayonnaise. So I decided to cheat a bit and bake bread that’s not made with yeast.
I got this fabulous flower pot/bread pot for my birthday from my friend, Nicole. The moment I saw it I fell inlove with this absolute cutests of foodie gifts. Along with the pot came a small card with a few bread recipes on it. But they are so easy that I can’t even call them recipes with a straight face. 3 ingredients..that’s all you need for a basic bread dough. Then they also have a few variations like Oxtail bread, onion bread, sweetcorn bread and cheese bread. I’ve done the onion and the oxtail and let me tell you, both are DELICIOUS! I am so chuffed by the sheer simplicity of these breads that I’m baking them on a regular basis now. The first one I baked with regular self-raising flour and although it works really well, I wanted to try baking it with White Bread Flour. I added 2tsp Baking powder and it came out so well. So I’ll make it with Bread flour from now on and soon, I promise, I’ll make proper bread. Actually now that I think about it, maybe it’s all the kneading that intimidates me. You see, I’m a very, very, VERY lazy cook. Hence my love for soup powder. I don’t use it to make soup, but I LOVE it for flavouring sauces. But anyway, I WILL one day bake proper bread, from scratch! Hopefully before the end of the year.
But for now, I share this recipe for the easiest bread in the world (other than beer bread) with you.I know not everyone has this ‘flower/bread pot’ but you could make this just as well in a loaf tin. It’s amazing served with soup but even better served by itself with masses of farm style butter.
Makes 1 medium sized loaf of bread
500g (17.64 ounces) Self raising flour (or 500g (17.64 ounces) white bread flour with 10ml (0.34 fluid ounces) baking powder)
500ml (16.91 fluid ounces) Buttermilk (if you don’t have buttermilk mix 500ml (16.91 fluid ounces) full cream milk with 20ml (0.68 fluid ounces) lemon juice and allow to stand for 5 minutes)
5ml (0.17 fluid ounces) salt

Mix all the ingredients in a bowl until it forms a sticky dough.

Transfer to a well-greased loaf tin and bake at 180°C (356 degrees Fahrenheit) for about an hour until the bread sounds hollow when tapped.

Variations :
For Oxtail bread : Mix one packet of Rich oxtail soup powder and 1tbsn garlic flakes with the rest of the ingredients and top with 100g (3.53 ounces) cheese if desired.
For Onion Bread: Mix one packet of Brown onion soup powder with the rest of the ingredients along with 1 cup grated cheese.
For Sweetcorn bread: Use only 250ml (8.45 fluid ounces) Buttermilk and mix 2 eggs and a can of Cream style sweetcorn in with the rest of the ingredients.
For Cheese bread : Mix 1.5 cups of grated mature cheddar in with the rest of the ingredients
